    Hello,

    I made these today, and they were delish!

    Big Batch Meatballs

    6 eggs slightly beaten
    1/4 cup minced onions
    1 small can of tomato paste
    1/2 tsp garlic powder
    1/2 tsp salt
    1/4 tsp paprika
    1/4 tsp chili powder
    1/4 tsp pepper

    3 oz crushed pork rinds (I use my food processor)
    5 pounds ground beef

    Mix together first 8 ingredients in a LARGE bowl. Add crushed pork rinds and ground beef. Mix together with your hands.

    Shape into 1 and a half inch meatballs and put on a large dinner plate. Fill plate with meatballs. I microwave a platefull in my microwave for 7.5 minutes. Your microwave may be different. Test one after 5 minutes and adjust time as neccessary for future plates.

    To bake meatballs in oven, put them in a large pan and bake for 20 - 25 minutes at 350*.

    To make meatloaf, divide meat mixture into 3 or 4 loaves. Cook individually in the microwave for 10 to 15 minutes. Or bake in the oven for 45 to 55 minutes at 350*.

    ***NOTE*** I rotate 3 dinner plates full and cook my meatballs in the microwave. I make 2 at a time, wash up, do stuff around the kitchen till a plate is done. Then, I put the meatballs on a large tray. I rince the fat off the plate down the garbage disposal. I wait until I have 2 empty plates to fill with raw meatballs and do it all over again. I place the whole tray in the freezer so the meatballs freeze individually. When frozen, I put them in gallon sized freezer bags and store them in the freezer. I take out what I need, and put the rest back in the freezer.

    Serving suggestions:

    Eat them plain- great as a meal or snack
    Serve as a side for a salad
    Put a sauce over them for the family
    Meatball sandwiches with low carb bread

    Carb count: I made about 150 little meatballs
    There was carbs in the tomato paste and onions, 44 carbs in all. 44 divided by 150 is less than 1 carb per 3 meatballs. (actual total is .88!)
    If you like, you can leave out the tomato paste and onions, but I like the flavor they give.
