    Re: Cheesecake Pancakes...DIVINE!!!

Has anyone tried this without flax seed meal? I'm tired of going to the grocery store for another item I need.

Can i just tell u that i LOVE LOVE LOVE this recipie! I add a lil more flax to it to give it more binding and less eggy taste ( not a fan of eggs). I make em every sat when i make the family pancakes..that way i dont feel left out. THANKS!

Oh yeah i dont add any splenda to mine, just a touch of cinnamon and vanilla and eat it with sf syrup

I modified this recipe and they turned out exactly like pancakes! All the ingredients the same, except I used 4 TBS of flax meal and 1 1sp of baking power. You can eat 2 and refrigerate 2 for the next day. Yummy!

          My first negative post...Sorry...

I was a little hesitant once i mixed the items (before adding the egg whites), but once I did, it did resemble pancake batter. I have one of those non-stick griddles and didnt need to butter. With that said, plopped four spoonfuls onto the griddle and flipped at the recommended intervals. They looked like pancakes, flipped like pancakes, smelled like french toast (as per my friend), but they just didnt do it for me.

Although they are cheesecake pancakes, I guess I expected them to look/taste more like pancakes and they didnt. But my friend LOVED them and she's going to be making them again.

I've gotten lazy about separating the egg whites and beating them so I have taken to throwing all of the ingredients in a bowl and beating them until smooth and then cooking them like scrambled eggs. They look like eggs, but taste like cheesecake. mmmmmm.

I just made them, DELISH!! i only changed a few things. since i tried the first with butter, and it pretty much stuck to the pan, i made the rest with canola oil. and it was perfect, easy to flip, and on low they cooked much faster than with butter. i also added baking soda and vanilla. and i too ate them all... for shame. hahaha

Sadly i fell off the wagon...HOWEVER im back on starting today 8/21/09 (176lb)

                      Re: Cheesecake Pancakes...DIVINE!!!

The pancakes sound great. I will try them this weekend. One suggestion on the flipping. Get yourself a small non-stick saute pan, either 6 or 8 inches across. Practice a wrist flip for a while with a half cup of beans in a cold pan. Once you have that going, try buttering the pan, heating it until the butter melts, then frying and flipping a single egg. Graduate to two eggs at a time. Then you are ready for pancakes. Make them the size of the bottom of the pan. Lots of lubrication (butter), a confident flip, and there you are. DO NOT attempt the flip over the hot burners. Misses are nasty to clean up.

These turned out great. Cooked them slow to make sure they flipped well which seemed to help. I will try with blueberrys next time but since I'm still into I'll have to wait. A GREAT break from eggs everyday.
