  • LC Pizza Crust, variation of George Stella's

    I found a pizza crust by George Stella on the net. His recipe included a lot of great info of making them look "professional", but since I'm an amature to cooking low carb from scratch (and trying out soy flour), I thought I'd change up a few things.

    I'm REALLY going to have to curb portion control here because it was soooo good that even the neighborhood kid that was over playing with the girls thought it tasted good. And you know if a kid likes it, well, it's pretty good! I had 1 piece with a small salad and I'm stuffed. I'm hoping that the leftovers are just as good the next day.

    I made the crust on a large cookie sheet covered w/parchment paper and sprayed generously. I also sprayed my hands really well with cooking spray instead of using a rubber spatula because it was sticking to my hands.

    George Stella’s Low Carb Pizza Crust

    Tweaked by Apple



    Crust:

    1 ½ cups soy flour

    3 large eggs

    ¾ cup heavy cream

    1/3 cup club soda (I used water)

    1 tsp salt



    *additions to crust

    2 Tbl parmesan cheese

    2 Tbl parsley, dried



    1 small can tomato sauce (I added dried parsley, salt and pepper, and shake of garlic powder)

    1 cup of shredded cheese (I used pepper jack and added sliced bell pepper)



    Equipment:

    2-12” pizza pans, or large cookie sheet

    Cooking spray to generously spray pans (I used parchment paper and sprayed the paper)

    Preheat oven to 375 degrees F

    • place the rack in the center of the oven before preheating the oven. Generously spray pizza pans.
    • Make the crust: In a medium bowl, stir together all of the crust ingredients to make a smooth, thick batter.
    • Using a rubber spatula, spread half the batter as thinly and evenly as possible over the first pan. Repeat with the second pan. (I used an extra large cookie sheet).
    • Bake the pizza crust(s) for 12 to 15 minutes, until lightly golden brown and firm to the touch (I think a few minutes longer might make a difference for the center of the pizza crust to “crisp up” more). Remove the crusts from the oven and increase the oven temperature to 400 degrees F.
    • Top with sauce, cheese, and other toppings you like and return pizza(s) to the oven and bake for 10 to 12 minutes, until cheese melts and starts to brown. Remove and cut each pizza into 8 slices before serving (I cut mine into 16 slices since it was a cookie sheet size).


    Helpful Hint:

    Make sure to bake the crusts until they’re really golden brown the first time you put them in the oven. That will ensure a crisper crust after they are baked with the toppings!



    Net Carbohydrates for crust: 1.5 carb per serving (16 servings, 24 carbs for entire crust).

    Apple, that looks great! I've seen this recipe before, but I've been really nervous about making it, fearing an overpowering soy taste. Could you taste the soy? Was it strong? You might be converting me into a soy-flour fan!

      You know, I think with the added flavors of garlic powder and parmesan in the dough, I couldn't taste that "soyee" bitter taste at all. I think I could use this recipe for a number of other types of "crusts" and not just for pizza. I was thinking even making a "desert" type of crust with it. Hmm...

        ...hopefully leaving out the garlic and parmesan, right?

        I imagine something like a pumpkin pie seasoning (ginger, cloves, allspice, cinnamon, nutmeg) would mask the soy-ness if you wanted to do a dessert.

          oooh....yep, definitely leaving out the "Italian spices" for sure to do a desert style pizza. i like weird food, but not that kind of weird. I think the applepie spices and whatnot would taste awesome with a sprinkle of splenda mixed with cinnamon over the top and drizzled with butter. Ohh..and maybe even spread some cream cheese mixed with the splenda and cinnamon and then bake.

              What about the coconut flour for the dessert style pizza?? I'm all into coconut flour these days.

                Oh lord, just what I need, a dessert pizza.

                I think I'm allergic or have a sensitivity to coconut. Is it coincidental that one of my favorite candy bars used to be Almond Joy?

                  I keep spelling dessert wrong. Ugh!

                  Joy, oohh...I think you can be really creative to sub the coconut flour for the soy flour and make a really neat (big) type of pan cookie/bar type thing.

                  Its funny, I couldn't stand coconut anything (except pina coladas of course ) but since I've banned myself from any treenut flours, I like the coconut flour. I wonder if I could make coconut "shells". You know the kind that you bake inside muffin pans and then pull out to fill up with some kind of cream and top with berries?? Okay, I'm not only making myself drool, I just saw a flash of my grocery bill raise before my eyes. LOL. It's all good!

                    Thanks for posting this Apple! I just made it and it's very yummy! I only made a third of this recipe since it's just my BF and myself here!
