1 lb ground pork
½ t salt
1 t black pepper
4 cloves garlic
6 oz mozzarella
3 T olive oil
5 C spinach
1 C sliced water chestnuts (1 sm can)
1 tub philly garden veggie cream cheese
Mix garlic, salt, pepper and ground pork. Bake at 350 for 30 minutes in an 8x10 baking dish. Drain, then cover with mozzarella and bake for another 5 minutes. Let cool while sautéing spinach in olive oil. Dice water chestnuts. Spread tub of cream cheese over pork, then top with water chestnuts and spinach.
Makes 6 servings.
