  • Almond Fried Chicken

    This is the first recipe I'm posting. Hope I'm doing it right. My entire family enjoyed it including my Atkins-doing husband, my finicky 7 yo DD, and my stubborn 5 yo DD. I figured that was pretty good testimony. Hope you like it! I figured the nutrition at http://www.recipecal.com. I *think* it gave me the nutrition for the total recipe so I divided it by 6 because I figure the recipe makes 6 servings.


    1 egg
    1/2 Cup Cheese, parmesan, grated
    1 Cup sliced almonds
    1 Chicken (I like "pick of the chick" packages)
    2 tsp parsley
    1/2 tsp paprika
    1/2 tsp black pepper
    garlic salt to taste

    Cut up chicken. Beat egg with 2T water.

    Crush almonds. Mix with parm cheese. Add spices to taste including garlic salt, pepper, paprika & parsley.

    Dip chicken in egg mixture, then coat with almond/cheese mixture. Fry in vegetable oil over med heat until juices run clear.

    Total Fat 22.77g (not completely accurate since I did not include cooking oil in the figures)
