I came up with this recipe just tonight.
CINDI’S CRACKED PEPPER RANCH CHICKEN & SPAGHETTI SQUASH
Large package Chicken Breasts
1 Spaghetti Squash
1 Packet Knorr Cracked Pepper Ranch Mix
Olive Oil
Margarine
Parmesan Cheese
Boil spaghetti squash in large pot, 40 minutes on one side, then turn to opposite side and boil another 40 minutes.
While spaghetti squash is boiling, in a casserole dish, lightly sprinkle Knorr’s Cracked Pepper Ranch mix in bottom of casserole dish. Lay chicken breast on top of the mix, and pour a very small amount of olive oil one each chicken breast. Lightly sprinkle Cracked Pepper Ranch Mix over the chicken breast. Cover and bake for 1 hour at 400 degrees.
When the spaghetti squash is done, remove it from the large pot, and split it long ways. Take our the seeds at the very center of each side. “Fork” the spaghetti squash with quick motions, and it will shred to look like spaghetti.
Place spaghetti squash on a platter and sprinkle a dash of olive oil and about 1 Tablespoon margarine all over it. Mix well. Cut the chicken breasts into small shredded pieces and layer on top of the spaghetti squash. Sprinkle liberally with Parmesan Cheese and serve.
* I just made one plate, to eat at dinner, with one chicken breast and about 1 ½ cups of spaghetti squash. These measurements aren’t exact, as I cook by sight, not measurements.
