I made this last night and it was a hit with my husband. I got the idea from Linda's recipe site but don't think this follows it exactly:
Makes 2 servings
2 steaks - cut of your choice (I used 6 oz cuts of round steak)
3/4 cup peppers cut into small strips
1/4 cup chopped onion
1/4 cup mushroom pieces
salt/pepper/steak seasonings to taste
1/2 Tbsp oil
1/3 cup mozzarella shredded
1/4 cup cheddar shredded
In large skillet, heat oil and cook peppers and onions til tender, then add mushrooms. Add salt & pepper to taste. In seperate skillet (or on grill or however you prefer to cook your steaks) cook steaks to just UNDER your desired doneness (because you'll be sticking them in the oven after this step and they should could the rest of the way) and season to your liking. Place steaks on oven safe dish. Sprinkle a little of each cheese on top then top with veggies. Top with remaining cheese. Stick in oven heated oven (I had mine on broil) and let cheese melt.
This was really good. You could also just stick the steaks in the micro on the final step to melt the cheese if you wanted.
