    A recent recipe from my kitchen that has kept my hubby happy, whilst I'm on induction. Its also done in one frying pan so great if you want to keep the washing up to a minimum.

    To serve 2-3 depending on portion size

    Ingredients

    1 oz Butter
    100g Onions (finely chopped)
    100g Mushrooms (sliced)
    75ml Double (Heavy) Cream
    400g Chicken Breast (stir fry strips or diced)
    Korma Spices
    Oil


    I like to microwave my onions for 2-3 minutes to soften them before I fry them in the butter. Just as the onions are starting to turn brown add the Mushrooms and fry them with the Onions.

    I set the Mushrooms and onions aside, and stir fry the chicken until just cooked. Then add the Korma Spices and oil with a little water to cook. As the water starts to evaporate add more until you have the amount of sauce you would like with your Curry.

    Return the mushrooms and onions to the pan with the Chicken and then add the cream. Let the mixture reduce until you have a sauce that is thick as required.

    I serve this on a bed of chopped up Mung Beansprouts which have been steamed. This is a good substitute for rice.

    20 carbs overall, but remember this can serve 2-3 people.
