1/4 cup of Almond Accents - Italian Parmesean flavored
1/4 cup atkins bake mix
4 chicken breasts
2 eggs
seasonings (I used salt pepper and cayenne)
Oil
Heat oil in a frying pan
In a bowl, mix your eggs up very well
In a food chopper chop your almonds very finely. Pour into a large ziploc with the bake mix and seasonings.
Dip chicken pieces in the egg misture.
Toss in the ziploc and shake like shake and bake.
Cook in the oil about 6 minutes per side.
This chicken was soooo delicious. It was tender, juicy, crispy, and had a bit of spiciness. Was the best food I've ever made up since starting Atkins.
