This recipe is for Rung 8 because of the onions and although there is a very small amount of V-8 juice in it, it contains carrots.
Curried Chicken
1/2 cup water
1 11.5 oz. can of V-8, divided
1/2 cup chicken broth
2 to 2 1/2 lbs. chicken
1/2 cup chopped onion
1 1/2 tsp. Curry powder
1/2 tsp. salt
1 T. flour (see instructions below)
In a glass baking dish, combine water, 1/2 cup of V-8, chicken broth, onion, Curry and salt.
Add the chicken and turn to coat.
Cook on high in a 1000 watt microwave for 20 to 22 minutes, depending on the thickness of the chicken.
Remove the chicken from the broth and skim off the fat. (At this point, I also remove half of the broth for me to eat and continue the rest of the recipe for the family, or you can just stop here).
Place broth in a pan and bring to a boil on the stove. Blend the flour with the remaining cup of V-8 juice and add to the broth to make gravy for on mashed potatoes. Add half the chicken to it and heat through.
Makes 4 servings. The nutritional info is tricky because it depends on whether you use breasts or thighs. I use thighs. But the carb count on the half that I take out for myself is 4 net and that half equals 2 servings so that's 2 carbs per serving.
