  • KANSAS QUICHE

    This recipe is slightly modified from one in the Rolling Prairie Cookbook by Nancy O'Connor. Carb counts will vary depending on what milk substitute you choose, and what veggies.

    4 eggs
    1 and 1/2 c grated cheese (cheddar or swiss)
    1/2 c milk (I use unsweetened soy, or you could use Hood's Carb Countdown or even diluted half and half to keep the carb count low)
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 teaspoon dried basil
    1/4 teaspoon dried oregano
    1 pound veggies (greens like kale or collard greens, or sliced zucchini and summer squash are good)
    half an onion, chopped

    Oil an 8x8 pyrex dish or casserole.

    Preheat oven to 375.

    Steam the veggies and onion until tender. Cool slightly. (If you have leftover cooked veggies, great! Just skip this step.)

    In a medium mixing bowl, beat the eggs well, then stir in the milk, cheese, and seasonings. Stir in the steamed veggies and pour the mixture into the pyrex dish.

    Cover and bake for 30-40 minutes. (I usually uncover for the last 5-10 minutes, so it browns nicely on top.)

    This makes a great brunch or a light supper with nitrate-free bacon (mmmm, bacon). And if you have vegetarians in the house, they'll like this.
