This is an induction recipe I created tonight and also not a "true" curry. It was goooooood! At later stages I'll add more veggies. I have a hard time getting my carbs in and was not looking forward to another salad. I entered it into fitday and the info is at the end of recipe. This was filling. I ended up eating all of the mushrooms and saved the beef for a salad tomorrow. The carb count is high because of the mushrooms - which surprised me.
Beef and Mushroom Curry.
Ingredients:
2 tbsp butter
2 cups mushrooms - sliced
½ lb ground beef/mince meat
Curry powder – I used Schwartz HOT curry powder.
Water
Garnish optional – shredded cheese
Method:
Melt butter in frying pan. Fry mushrooms until done. Remove from pan.
Add ground beef and fry until done.
Add curry powder. It’s up to personal tastes – I use 2 tablespoons.
Add water to pan to cover ground beef and mix well. Simmer on medium until sauce is almost gone.
Add in mushrooms to heat through.
Serve.
Sprinkle with ¼ cup cheese, shredded if desired.
