  • oven baked flax sheet cookie

    microwave flax cookies are too dry and hard for me. I experimented and came up with an oven version.


    Grind 1 cup seed, I used golden

    Cream 1/2 stick (4oz) of softened butter with the flax

    Add 1 tsp each vanilla and cinnamon, and 2 tsp Stevia

    (if you use Splenda you will have to estimate...)

    I added about 4 tablespoons of sunflower seeds after beating

    After you cream this all together it will be thick, you may have to fight it off the beaters. Add a little water to make it spreadable, I needed less than 1/8 cup.

    Lightly oil the bottom of a cookie sheet, spread the mixture to cover a large part of the surface, about 1/4 to 1/3 of an inch thick. Bake in the oven at 350 degrees for about 15 minutes or until the edges start browning.

    After baking let cool and break into cookie portions. I suggest you divide this up into baggies and portion it out, I could have eaten the entire thing!

    The microwave flax cookies (and wafers) soften up if you put them in a loosely sealed plastic bag or container.

      getting really hungry for flax seed cookies and don't even know what flax seed is or where to get it. Can you buy already ground?

        Yes you can get it aleady ground...I get Bob's Red Mill brand.

          Also, most health food stores have flax seeds. You can get them as a meal or grind them yourself.

            you can find flax meal and seeds in most grocery stores in the specialty flour areas or the health food sections. BOB's RED MILL is a national brand caried by Kroger, BIlow, and FoodCITY

                Well there is a blast from the past.. OP is me four years ago. I could not remember my signin or password, and my email server had changed from Cox to Suddenlink so I could not use my old cox.net email to access the old account.

                And when I first signed back in what.. late July? I couldn't remember my old nick either, so just started over. Funny... I was a size 24 back starting then? I didn't get over a size 20 this time at similar weights. I have been swimming fairly consistently at the aquatic center, so I guess that is why.

                I might just go bake a flax cookie too, for old times sake!
