If you miss pasta, but hate the high price of the low carb stuff in the store or cannot find it in your area, have I got something for you!
Mock Pasta
Start a small pot of water boiling - I use a 1 qt pan
1 large egg - beaten
1/4 cup psyllium husks (NOT THE POWDERED STUFF)
dash or 2 of salt
Mix the beaten egg, psyllium husks, and salt together. This will make a stiff dough. With a spoon or your fingers, drop small pieces into the boiling water. My pieces were about a quarter inch long and as wide as a pencil. Let them boil for about a minute. Remove them to a plate.
I boil about 5 or 6 at a time, put them on a plate and boil some more. If you will not use them right away, put them in the fridge until you want to eat them. They can be reheated in the microwave easily.
As for the taste, not bad. A little bit gritty because of the pyslium, but not to gritty. I plan on eating them with garlic and butter. I am in search of a low cal tomato sauce to top them with.
5.47 grams of fat
3.51 grams net carbs
I wouldn't eat this every day. That quarter cup of psyllium is almost all of the fiber you should eat in a day. I would suggest that you work your way up to this much fiber instead of going from practically none to about 24 grams in one sitting. I cannot be held responsible for the outcome, ya'll better warn your family!!
Oh yeah, I recommend drinking lots of water after you eat this dish.
