  • "Wholemeal" Bread - Very Quick & Easy

    I am so happy - this is fantastic, it's real bread, like a whole wheat bread and has only 1 net carb per slice.

    This is the result of quite a bit of experimentation (some of it producing truly yucky results!), because my DH has been longing for an occasional sandwich and I am really, really pleased with the result. It's proper bread, tastes great, slices well and holds up very easily to having a filling when used in sandwiches.

    Best of all it only takes minutes to make!!

    NOT induction friendly - you need to be on the nut rung of OWL. I didn't add any sweetener, cos I don't like sweet bread, but I imagine you could add some stevia or splenda if you wanted to.

    2 oz ground almonds (aka almond flour)
    1 oz flaxmeal
    6 tablepoons wheat bran
    .5 teaspoon baking soda (bicarbonate of soda)
    .25 teaspoon baking powder
    .5 teaspoon salt

    2 medium eggs
    1 teaspoon sesame oil
    1 tablespoon full fat yogurt
    water
    .25 teaspoon vinegar

    Mix all the dry ingredients together well in a bowl.

    Beat eggs and yogurt together with oil in a cup. Add water - a little more than half amount of water in volume as you have in the egg mix. Add the vinegar and mix through. Add the egg/water mixture into the dry indgredients and beat together with a spoon. You end up with quite a sloppy mixture.

    Scrape into an uncovered microwave proof container and flatten into it well so that there is no trapped air. I used a round plastic container about 5" in diameter and 3" deep, with straight edges. It needs to have quite high edges as the bread rises considerably.

    Put into the microwave on high for 5 mins. Microwaves vary - the top of the bread should be dry.

    It looks sort of grey/pale brown and, to be honest, not especially appetising when its done! It tastes fine this way, but I popped it in a medium-hot oven (after removing it from the plastic container, with great care cos its very hot!) for about 10 mins until it was lightly browned all over to give it a good crust.

    Not sure how it keeps and freezes yet, but will test that over the next few days.

    Calories: 831
    Fat: 69g
    Protein: 39g
    Total Carbs: 40g
    Fiber: 30g
    Net Carbs: 10g

    Gives about 10 good sized slices - each with 1g net carb and about 85 calories.

    2 days later and I just had a slice of this with mushroom soup for lunch. It is perfectly fresh. I kept it wrapped in foil.

    I am seriously hoping this does not stall me. There is nothing in it that should, but you never know. I still can't believe it is only one net carb per slice, but there it is, that's the total. Can anyone see where I have made a mistake in totaling up the ingredients? Although I have gone over them repeatedly.

    It really tastes just like a particularly good regular wholewheat bread - it is so, so good to have a slice of bread with soup!

    If you are at the right stage of Atkins, I URGE you to try this!!!

      Thanks so much for posting this Kate! I'm definitely going to try it sometime soon! I need to ring the changes from flax crackers now and again!

        Any thoughts of making dressing out of this for Thanksgiving? I found a low card bread mix by Krusteaz. I got it in a Dollar Store and bought them out...all forty two boxes!!!
        Krusteaz doesn't make it anymore though so I always look for a low carb bread recipe. Thank you for yours.........what is it about a "sandwich" to make you feel better. My daughter was able to get "through" just because she could have a sandwich!!!! Anyway, have made some bread crumbs out of it for dressing and will probably do a from scratch recipe. Hope you can make it from your bread too...........have a good Thanksgiving.

          Any idea how long it would take to bake in a regular oven? I'm microwave-less.

            Unfortunately, for some reason, it didn't work at all for me in a regular oven. The bread didn't rise and it was heavy and not very nice at all.

            I am not sure why, but I think it is because the reason it rises so well (which it does) is the reaction between the vinegar and the bread soda, which takes place very rapidly in the microwave as it heats it fast. In the oven it takes longer to heat and by the time the reaction occurs the almond flour and eggs have already become a little cooked and too heavy to rise. But that's just a theory.

            PJHB, I have not tried it as breadcrumbs, but I would think you would need to dry it out a bit first. It's quite moist and wrapped in tinfoil stays moist and fresh for several days - unless it was dried quite a bit I think it would be very soggy stuffing.

              I've gotten spoiled by having Krusteaz Low Carb bread. It's baked in the oven and looks and tastes like a loaf of whole wheat. I did make stuffing with it, adding what I'd add to regular stuffing and it was terrific. Also made rolls, so my daughter was able soak up the gravy.....hahahahaha No one knew my dinner was low carb..............and my daughter was happy!!!!!!!!!!

                  I think I had written about it before...............I was in a $Store, when I saw Krusteaz Low Carb bread mix. 9 carbs a slice......you can make it in a breadmaker or by hand kneading it. It bakes into a regular size loaf. Anyway, tried it to keep my daughter sane and she liked it. I RAN and bought all that they had, including low carb pancake (okay, but not great), and cornbread (which was awful). I deep fry with it, make pizzas, hot pockets, all the stuff I can create.

                  BUT.........Krusteaz doesn't make it anymore. I'll suffer shell shock when I'm out of it and have to buy full price bread mix!!!! Netrition.com is a good site for bread mixes.

                  I don't know what it is about having a SANDWICH..........hahahahaha But once my daughter was able to make one, she was fine.

                    LOL. Par for course. ah well, I don't need it anyway, the atkins revolution rolls, flattened make a pretty good sandwich holder

                        Glad you enjoyed it!

                        I have recently split the same mix into 8 and put each division into a ramekin, then microwaved them four at a time (I only have 4 ramekins!). Again I then pop them in the oven. You end up with very nice little crusty bread buns that are 2.5 net carbs each.

                          I'm away on a trip at the moment, so have tried freezing the last of the batch I made. I think they'll freeze very well.
