I just posted on the recipe request board that I was going to try to make some from a recipe I have in a canning cookbook. Here's the problem. It calls for 24lbs of tomatoes! LOL!! I don't have 24lbs of tomatoes at the moment, but I was going to try to tweak it into a scaled down version using pre-made tomatoe paste.
Here's the recipe if you want to try it out and if you have a bumper crop of tomatoes. It's from the 4th edition of "Putting Food By".
24lbs ripe tomatoes
3 cups onions, chopped
3/4 tsp cayenne pepper
3 cups cider vinegar
4 tsp whole cloves
3 sticks cinnamon crushed
1 1/2 tsp whole allspice
3 TBS celery seeds
1 1/2 cup sugar (we'd use splenda here, of course!)
1/4 cup of salt
Wash, peel, core, quarter tomatoes. Combine tomatoes, onions and cayenne in large stainless steel kettle. Bring to boiling and simmer for 20 min. In a small pot bring vinegar and spices tied in bag to boiling. Remove from heat. After 20 min, add to tomato mixture, and boil all together for about 30 min. Put through a food mill, return to pot. Add sugar and salt, boil gently, stirring until volume is reduced by half and mixture rounds on spoon without separating. Fill pint jars, leaving 1/8 inch headroom; ajust lids. Process in a boiling water bath for 15 minutes. Remove jars, cool upright. Makes 6 - 7 pints jars.
Of course if you did a really scaled down version of this you could make one jar at a time, and then not worry about the processing.
I'll update you on my progress! I don't know about you, but I'm sick of paying 6 bucks for sugar free ketchup. Major ripoff! You know, I'm used to buying organic food, so I tend to pay a premium for my food, but the cost of low carb stuff just burns my bottom. It's outrageously expensive!
