  • Sandwiches

I miss them and today in Sunset Mag, they had a pull out for sandwiches that looked so good,
So, I tried one and yummy, it hit the spot.
Instead of putting the lettuce inside, I used a leaf as a wrap.
This is the one I tried today
    Bistro Beef
1T mayo and a touch, a tad bit of horseradish.
    2 slices of tomato,
Sliced roast beef, the deli kind, (check the label)
caramelized onion ( onions are very carbie but also very delicious. What I did was caramelize one sliced onion and just took about two rings for the sandwich and refrierated the rest for hamburgers or quiches or ....
So next time you can't find a thing to eat, what about a sandwich
    The others they had were
Grilled Cheese. (I have to work on this one, but maybe someone has some ideas. )
Napa Valley Turkey - It called for red grapes, shredded carrot, mayo and smoked turkey with Cheddar. Sounds like a great salad for OWL or PreMaint
California Club - No brainer, this one would work great, Mayo, turkey breast, Avocado, bacon and a bacon slice, wrapped in a lettuce leaf.
Southwest Chicken Panini, (without the p)
Grilled chicken breast, chili powder in a mix of mayo and ranch (Hum haven't tried that), tomato slice and a slice of cheese.
Makin my mouth squirt, might have to make another for dinner

The bistro beef sandwich sounds great! And thanks for the tip on caramelizing onions but just using two rings.

The recipes make my mouth squirt, too!

Grilled cheese..... ummmmmm..... need to do some creative thinking on that one!

        Re: Sandwiches

Yummy. I'm going to try the Bistro Beef. I had something kind of like this today.
Chicken Cordon Blue: 1 grilled chicken tender with a dab of mayo wrapped in ham, little sprinkle of cheese, one thin slice of tomato, couple onion strips wrapped in romaine lettuce.

(grilled cheese : try these http://genaw.com/lowcarb/cheezits.html they are wonderful and while not a sandwich satisfy my need for crispy cheesy goodness)

          Re: Sandwiches

has anyone tried the spinach bread - I was reading about it the other day -- sounds like it might be something that might work. I haven't made it I just kept the recipe - the notes are the lady who wrote about it originally.

          Here's the recipe:

          Spinach Bread

10 ounce package frozen chopped spinach, thawed and squeezed well
          4 eggs, beaten
          1/4 teaspoon garlic powder
          1/4 teaspoon salt
          1/8 teaspoon pepper
1 ounce parmesan cheese, 1/4 cup, the kind in a can Butter an 8x8" glass baking pan. Mix all of the ingredients well in a small bowl. Pour into the pan; bake at 400ยบ 15-20 minutes until set and slightly browned. Cool a few minutes in the pan, then cut into serving pieces. Store in refrigerator or freeze.

I didn't have enough of the parmesean that was requested so I added mozzarella- cooked it on a pizza pan- it turned out great!

It held together really well- and was still quite thick. I had a slice yesterday with salsa, sour cream, avocado, olives and tomatoes- and another today with feta, olives, sun dried tomatoes and artichoke hearts.

It is really filling, can be made into bread for paninni or grilled cheese- or something like that.

Iam, that sounds delicious and it's going into my collection also. I wonder how melted cheese would taste.

Carole, that's going into my collection, too! Will make a point of making it sometime this week.

              Thanks!
