    CUCUMBER SALSA
    This recipe was created to accompany Smoked Whitefish Cakes with Cucumber Salsa.
    Can be prepared in 45 minutes or less.




    2 cups finely chopped seeded peeled cucumber
    1 cup chopped radishes
    1/3 cup chopped fresh cilantro
    1 1/2 tablespoons white wine vinegar
    1 tablespoon sugar substitute


    Mix all ingredients in medium bowl. Season with salt and pepper. (Can be prepared 6 hours ahead. Refrigerate.)



    Makes about 2 1/2 cups.

    FENNEL, CUCUMBER, AND TARRAGON SALSA
    Can be prepared in 45 minutes or less but requires additional unattended time.



    1 fennel bulb (sometimes called anise), chopped (about 2 cups)
    1 unwaxed cucumber, chopped (about 2 cups)
    1 tablespoon minced fresh tarragon leaves
    1 1/2 teaspoons freshly grated orange zest
    1/3 cup plain yogurt
    2 tablespoons fresh orange juice (not sure of substitute - but could be used later in OWL or pre-maintenance)
    1 teaspoon sugar substitute



    In a bowl stir together the fennel, the cucumber, the tarragon, the zest, the yogurt, the orange juice, the sugar, and salt to taste. Chill the salsa, covered, for at least 30 minutes and up to 1 hour. Serve the salsa with grilled seafood.



    Makes about 3 1/2 cups.
