  • A low carb substitute for gravy?

    I am looking forward to the turkey but don't want the gravy. What can I put on the turkey or dip it in that's low carb? Thanks

    Hi, you can use a mayonnaise-based sauce for your gravy. Mix together mayonnaise and mustard or mayonnaise and a low(er) carb salsa or whatever you might think will taste good.

    If you're a little kitchen savvy, you can make any of the egg-based sauces, like bearnaise, to stand in for a gravy. Here's the ATkins Center recipe for it http://atkins.com/food/recipes/all/Bearnaise_Sauce.html

      What you want is the real gravy - demiglace, or pure reduced stock. Flour would only spoil the taste. Simmer a large quantity of any meat stock (chicken, beef, veal, turkey, etc) down to less than a tenth of its original volume on low to medium heat for a few hours. When the demiglace is syrupy enough to coat the back of a spoon, it's done.

      If this is cost or time prohibitive, take the stock down to 1/3 to 1/5 its original volume and thicken with:

      Flaxseed "goop"
      ThickenThin NotStarch
      Atkins bake mix browned in an equal quantity of butter to a thick roux
      Psyllium husk
