Get a small ramekin or oven safe baking dish, just big enough to hold one or maybe two eggs with room to spare.
Butter the dish generously and pour in a splash of heavy cream. Break the egg into the dish and bake.
That's the basic recipe. It can be livened up by adding some or all of the following things under the egg:
Circle of low carb bread
Chopped tomatoes, peppers, onions or garlic
Slice of ham or proscuitto or bacon
Crumbled sausage
Cheese can be added either below the egg(s) or sprinkled above.
If you take thin slices of ham or prosciutto, brush them with olive oil and bake them inside cupcake molds, they will stiffen into little baskets. Place your cream and egg and other ingredients inside the little ham baskets as they slowly bake for an elegant presentation.
Good oven temp for all this is around 325 to 350. If you like the eggs slightly underdone keep a CLOSE watch on them; they cook very fast in the end stages. I check starting at 15 minutes every minute or two.
Saute any veggies and/or meat you want in a little butter in a saute pan that can go under the broiler (mucho cuidado with the melt-able handles). Spread cooked stuff evenly over surface of pan. Toss on some fresh herbs that you like. Pour eggs beaten with a little salt & pepper over all. Heat gently until the bottom and sides are cooked through.
Now, add some grated cheese and place under the broiler element until the top is well-cooked and the cheese browned to your taste. Sprinkle with a bit of chopped fresh parsley and serve in wedges. Great for breakfast or with a green salad for lunch or dinner.
Some suggestions are:
• asparagas tips with ham and swiss
• crumbled Italian sausage with spinach and Parmesan
• mushrooms and green onions with jack cheese
• shredded chicken & cumbled Italian sausage with diced, fresh tomatos, onion and Parmesan

You can also make a fritatta on the stove top. Sautee your ingredients, and then add the egg mixture. Turn the burner to low, and cover tightly with the lid, or foil. in about ten minutes...breakfast!!
