I would recommend pureeing well cooked and thoroughly drained/dry spinach with some crushed garlic, Parmesan cheese, full fat sour cream and heavy cream. Leave some spinach finely chopped for texture while pureeing the rest.

Almond slices or ground almond flour goes really well with this recipe, by the way. If you're on the nut rung, try it. Almond flour in the dip and/or toasted crushed almonds on top.

Sesame spinach dip is also great, again on the nut rung. Sesame oil in the dip, toasted sesame seeds on top.

We make this all the time. I use 1-10oz frozen pkg of spinach, thawed and drained, mix with 8oz sour cream and about 1/2 cup of mayo and then add your seasonings. I usually use some garlic powder and pepper, and this last batch I used one of those Hidden Valley ranch dry packets for seasoning. Yumm. Used celery as my dipper since wheat thins are now a thing of the past.
