Re: Turnips or Cauliflower? What makes better fauxtatoes?

I have come to LOVE turnips; mashed, hashbrowned, they are awesome ..

I made the mashed ones for Thanksgiving and I really doctor them up with cream cheese (with herbs and chives), butter, chopped bacon, green onions, and shredded italian cheese. YUM .. they are waaaaaaaaaaaay better than cauliflower.

Julirama, which did you go with, the caulflower was slimy? Thats weird....
Try it one more time but go get some frozen cauliflower and nuke it then make sure all the water is gone and then mash it with butter and cream cheese. I wonder what made it slimy. Verrrrry interesting

Probably me blowing my nose into it.

        Just kidding.

I don't know why it was so slimy either...maybe it was sabotage. Yes I used cauliflower.

I made them with cauliflower and YUM YUM. I watched Kents video even though I did need to use my staf mixer to mix as I do not have a food processor. They came out so great! Even if I would ever fall off the Atkins bandwagon(god forbid) I will still keep making them. They tasted kind of sweet too but in a REALLY good way. My dh came home from dinner last night and couldn't figure why I had made mashed potatoes and was roasting potatos also. I told him that they were made out of cauliflower, full cream, butter and he was in shock. He refused to try them but the children sure liked it!

I didn't even add the heavy cream, they were already so mushy...

I'm so sad. I thought I'd have a replacement for mashed potatoes...<crying into her potato bin>
Try it again! You might just not have drained the cauli good enough. I put mine in the strainer thing and gave it several shakes over the sink to get all of the water out. Maybe add the cream and butter slowly. Depending on the size of the cauli you might have needed less cream or butter. Just some ideas.

Re: Turnips or Cauliflower? What makes better fauxtatoes?

I really don't care for mashed cauliflower fauxtatoes myself -- they're all right (especially if I'm in a restaurant, and they're all made up), but I don't like them well enough to cook them up at home. I boil chunks of turnip in chicken broth until the chicken broth evaporates (kills the bitter for me and makes them savory as heck), then add butter, sour cream, and sometimes bacon bits and/or chives and/or garlic.

              But to each his own!

Thanks for all of your replies! I'm going to try this again for Christmas, but I'm still on the fence about whether to use cauliflower or turnips...I thought the turnips had better texture but the cauliflower had better taste...I will let you know how it turns out THIS TIME!

I made another pot of mock fauxtatoes today. I didn't have any yet but tomorrow I gotta have some! I'm taking some to my mother-in-laws house. She thought they sounded yummy. I love . Before when I tried Atkins I made all kinds of boring crap. Now I can make such yummy things and it makes it so easy to stay on program.

To make it even better, make it like a twice baked potato and you can add it in a little dish and bake it for a few minutes in the oven to crisp the top a bit.
That sounds great. It would be a good comfort food.

I made cauliflower ones for Christmas Eve, and followed the directions from Linda's to a "T." They turned out really good--verrrrrrrrrrry delish.

I might try the turnip ones again, just to see if I can get rid of the turnip taste...I like the idea of using chicken stock!
