  • Need Meatloaf recipe, extended Induction

    2 lbs Hamburger, 2 eggs and Lipton's onion soup mix...and then what else do I need in there?

    Okay, this might sound weird but I like to chop, very fine, a can of mushrooms and add it to my meatloaf. It makes it a little moister and not as dense.

    I also add onions but I suppose with the soup mix you won't need them.

      I figured I would need something to keep it together....I don't really like mushrooms but if they are chopped up fine I probably wouldn't even taste them??

        Don't use the soup mix---it adds unnecessary carbs and alot of unneeded salt.

        If you don't like mushrooms, you can cook finely chopped onions and celery together until they are soft. And add them to the meat loaf.

          Hmm... I don't notice the taste in the meatloaf, but then I like mushrooms so that could be why.

            To be honest I add eggs, pork rinds (I really dont' like these but I cant taste them in the meatloaf, I have used regular and BBQ flavored ones), onion, garlic, Worcestershire sauce, little bit of cream, salt + pepper. Sometimes I coat with a LC ketchup because my hubby absolutely hates all meatloaf no matter how its made (some kind of childhood thing) but tolerates it with LC BBQ sauce on his half LOL.             I know you said you didn't like mushrooms but I wanted to share the basic meat recipe here. This is where I got the idea to add pork rinds to my meatloaf because when I made this I couldn't taste them at all, and it was very good. The sauce too is like a golden mushroom, and the hubby really liked this one.. but then again we are both mushroom lovers LOL.

              I dont measure, I just kinda throw things in but I made a bacon cheeseburger meatloaf, it was very good.

              I used:
              Ground beef
              crumbled bacon
              shredded cheddar
              grated parmesean or ramano cheese
              salt pepper seasonings you like
              a little onion grated with a cheese grater
              add anything else you like

              Mix it all together and bake it up, really super good !!

                I shred some cheddar cheese into the mix and it helps to keep it together.
