  • looking for quiche recipes ... and BBQ sauce too!

    I am looking for some crustless quiche recipes (I am in dairy rung right now)
    also a recipe for BBQ sauce

        Okay now I have to ask lol how do you cook it after it has been frozen? Microwave? Toaster oven? My stepmom tells me she freezes quiche all the time and pops it into the microwave, I must have done something wrong because it didn't taste the same to me.

          Yeah, I put it in the microwave. You'r right, it is a little different than if you ate it right out of the oven, but it's not bad. The thing I found is that you need to cook it at about 50-70% power instead of 100%. The faster and harder cooking makes the eggs turn to cardboardy consistency. If you cook it at a lower power then it turns out much better.

              Higgies--is this recipe safe for induction? I'm starting next week and am looking for good breakfasts and this one looks sooo good!

                In case he doesnt look in soon I looked at the ingredients and, yes, it is induction-legal.
                Just bear in mind that the veggies (onions, pepper, chilli) and cheese in it should be counted for in your daily 'allowance' of veg (2 cups of 'salad veg including peppers plus one cup of 'other veg' including onions) and cheese (3-4 ounces) and you should be fine.

                My favourite crustless quiche recipe which I use for both large quiches and individual 'muffin-size' ones is this.
                Ingredients
                4 ounces grated cheese
                4 medium eggs
                4 fluid ounces (1/2 cup) double cream (heavy cream in USA)
                chopped cooked veggies to taste (2-4 ounces depending on what is in the fridge)
                chopped cooked bacon or other meat (2-4 ounces depending on how 'meaty' I want it)
                1 tablespoon chives or chopped spring onions/green onions
                spices if you like - about one teaspoon or more

                Method
                Set oven to 150 C/300 F
                Spread 3 ounces of the grated cheese over the bottom of an oiled/greased ovenproof dish (or divide between muffin tin holes)
                sprinkle chives/onions over cheese as well as any spices you want
                sprinkle chopped veggies and/or meat over
                Mix eggs and cream together and add the last ounce of grated cheese and mix together.
                Pour liquid over and around the meat/veggie/cheese

                Bake for about 30-40 minutes till browned and firm to the touch (less for muffins)

                I find it very adaptable - last week I made a smoked salmon and broccolli quiche to use up leftovers!

                    And also keeps it from exploding all over the inside of your microwave, LOL. Ham is notorious for exploding in the microwave.
