This recipe is so heavenly, I'd love to convert it to an Atkins friendly version for a special occasion like Christmas. Here's the original recipe below. Please give me any suggestions you have to re-make this wonderful cake and family recipe. Thanks so much!
Amazing Rum Cake
1 box Duncan Hines buttery yellow cake mix or Betty Crocker extra moist with butter
1 (3 oz) package of instant vanilla pudding
1/2 c. cold water
1/2 c. rum
1/2 c. sugar
1/2 c. oil
4 eggs
1 c. chopped pecans
Topping:
1/2 stick of butter
1/2 c. sugar
1/4 c. rum
2 Tbsp. water
Mix cake mixture and dry pudding in mixer. Mix well. Grease bottom of a bundt pan with butter and line pan with chopped pecans. Heat oven to 325 degrees. Continue to mix water, rum, sugar, oil, and eggs into cake mixture. Pour batter into bundt pan and bake for approximately 1 hour. Do not over bake. Allow cake to cool and invert onto large plate. Poke holes into cake. In small saucepan, melt 1/2 stick butter, 2 T water, and 1/2 c. sugar. Boil for 5 minutes. Take off heat and then add rum. Pour topping slowly over top of cake, allowing it to drip in the holes and over sides. Serve with vanilla ice cream.
