I was wondering if anyone had a recipe for a Reuben Casserole.. I have read it about it here on the boards, but I cannot find a recipe...nothing like a good Reuben sandwich, so I am sure the casserole must be just as awesome.....!!!

I'm not sure if this would qualify as a "casserole", but what I do is take a can of corned beef (or leftover shredded corned beef), mix it with softened cream cheese, a tablespoon or two of low carb ketchup and a couple tablespoons of mayo (this mimics the Russian dressing) and a tablespoon of caraway seeds (this mimics the caraway flavor of the rye bread.) Then I put it into a crockpot and cook until it's heated through (microwaving it works too.) And I serve it on a bed of sauerkraut.~Megs~

Oh, I forgot ----you have to throw in some Swiss cheese, either into the corned beef mix so it melts in or you can have the Swiss on the side.
If you don't have low carb ketchup, you can sub tomato paste.~Megs~

I didn't even think about crockpot. I think I would put it in a baking dish. Russian dressing base, layer of kraut, layer of corned beef and then half way through add swiss cheese to the top. Once it's brown and bubbly drizzle either more dressing OR mustard ( I like mustard too) on top and the sprinkle of seeds is a great idea.

That was just off the top of my head, but, I may have to try it too. I'm actually wondering how it might be with a little egg mixed in to kind of bind the beef and kraut together... or maybe use shredded swiss cheese and mix it all and then add more towards the end... hmmm

Check out fried radishes from one of the other threads. I tried them this past weekend and while they are not the perfect potatoe sub, they came close and were quite good.
As for the eggs, I meant as a binder ( think lasagna or meatloaf)

I didn't know about cooked radishes either. I never really liked radishes until I tried these Radish Home Fries. OMG...unbelievably good and no funky radish taste. You could probably make a corned beef hash with them, just cut them up smaller like the canned hash potatoes are. I still make Reuben Casserole with sauerkraut, corned beef, swiss cheese and make some dressing with some mayo, horseradish, tabasco and some chili sauce. For the carb lovers in my house, I do make some pumpernickel or rye croutons from some bread and mix them in their portion. I wait until the cheese is bubbly and it is on the plate to add the dressing.
