  • Craving pumpkin! Do you have a recipe?

    I keep hearing people talking about eating roast pumpkin and it's making my mouth water

    I bought a big can of natural pumpkin last night but I know it tastes terrible on it's own.

    Anybody have a good way to eat this stuff?

        This is the recipe I follow for simple pumpkin pie. It's soooo simple! REMEMBER to add the carbs for the granular Splenda if that's what you use!! 3/4 cup Splenda is an additional 18 grams of carbs for the pie. You must be careful with this and practice good portion control! You CAN cut down on carbs by decreasing the amount of Splenda you use. It doesn't need 3/4 cup Splenda.

        Ingredients

        Directions

        1. Mix all ingredients together.

        2. Pour into a well sprayed pie pan.

        3. Bake at 350' for 30 to 40 minutes.

          Okay, I also have Mitzi's MUP recipe but don't you dare use the nuts if you're not on OWL Rung 3, ya hear?! This recipe is quote from Mitzi from one of her posts.

          Here's the MUP recipe:

          MUP is a name that one of the members gave to a recipe I came up with... it stands for Mitzi's Ultimate Pumpkin. I have even been dubbed the "Pumpkin Patch Princess" by another member (and she gave me a really cool graphic saying that, for my siggie).

          About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

          In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave for 1 minute, then take it out and stir well. I then add a few drops of liquid Splenda (just use sweetener of your choice), 1 teaspoon of cinnamon, .5 teaspoon of allspice, .5 tsp. of nutmeg, and stir. Once I passed rung 3 in OWL (seeds/nuts), I started adding 1 ounce of almonds, which is about 22 nuts that I cut in half (so I can have 44 nuts ). I then put it back in the microwave for about 40 seconds, stir, and it is done. As Ev indicated, it can be eaten warm or cold. Beware, though! This concoction contains 15 net carbs. So anyone who doesn't want to use up that many carbs can leave out the nuts and/or cut back on portion sizes of the ingredients. I ate it for a long time without the nuts, and it is good that way, as well. It does have a high fat percentage because of the 2 ounces of cream cheese, but I don't stress over that. Lots of people get by with only 1 ounce of cream cheese, but I like how creamy it is with the 2 ounces. This makes a pretty big bowl, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine, though.

              A search on pumpkin here on ADBB will get you a lot of pumpkin recipes.

              My favorite pumpkin recipe site is from Nigella. And once you get into OWL there are a TON of pumpkin recipes you can have.

                I don't like sweet pumpkin dishes, like pumpkin pie (it has an odd aftertaste that I find very disagreeable.) So I use pumpkin as a sweet potato substitute. There is a recipe for faux mashed sweet potatoes in the sticky thread called "Induction Recipe Basics" at the top of this forum: it's very good as a side dish for chicken, turkey or pork. I also like pumpkin soup and pumpkin gratin (a Jacques Pepin recipe that is naturally low carb.)

                  Oh, if you can find fresh pumpkin, it makes a good potato chip substitute. There is a recipe for it in the Snacks Recipe Forum. And it also makes a good potato homefries substitute. There is a recipe for that in the Side Dishes Recipes Forum.

                    OOOooooooooooo....I forgot about pumpkin soup. Mmmm. Here's a great Beefy Mushroom soup from Linda Sue that uses pumpkin. I add some chopped celery to the recipe.
