  • Sauteed Kale and Sausage

    I made this yesterday along with a pot roast with rutabagas. There's none left!

    Spicy italian sausage, casings removed
    3 cups of fresh kale, cleaned and washed
    minced garlic (as little/much as you want)
    chopped onion (as little/much as you want)
    left over bacon grease
    1 tbsp olive oil
    1 tbsp butter
    2 tbsp water
    salt and pepper

    Pre-cook sausage. Put aside.
    Add oil, grease and butter to skillet. Saute onions and garlic until onions are opaque. Add kale. Lightly toss. It doesn't take long for them to wilt. Add salt, pepper, sausage and water. Cover for 5 minutes. Serve.

    I only covered for maybe 2 minutes. I wanted to keep the bright green color. It is very good! Though the spicy sausage wasn't that spicy to me. Maybe next time I'll add crushed red pepper flakes.
