  • Faux Potato Salad

    I have heard others talk about it, but not a specific recipe. So, I made one up. Wowaza! It is tasty!

    Faux Potato Salad

    4 cups cooked cauliflower cut up into small pieces
    4 hard boiled eggs chopped
    2 tablespoons minced onion
    2 or 3 stalks of celery, chopped
    1 cup sugar free mayo I use Kraft
    Salt to taste
    Dash of garlic powder
    Dash of white pepper

    Put everything in a medium size bowl and mix. This makes about 4 heaping 1 cup servings. Each serving has 3.29 net carbs per serving.
    It tastes better if you let it sit in the fridge for a few hours before serving.
