  • Spaghetti Squash Slaw

    Cook your spaghetti squash (I boil for 20 minutes, or you can nuke). Remove the strands and let sit in cold water until chilled.

    Make your favorite low-carb cole slaw dressing. Here's mine:
    0.5 cup mayo
    0.25 cup heavy cream
    2 T lemon juice
    1 T vinegar
    0.25 cup splenda

    Drain the squash well, then toss with the dressing. Salt and pepper to taste.
