Stuffed Zucchini (a modified version, the original is available here http://www.lowcarbluxury.com/recipes...gieside08.html)
6 zucchini
1 C diced tomato- use canned italian flavor
2 green onions- sliced
2 T butter
1 1/2 cups parmesan cheese (use shredded, grated, or a little of both)
Slice zucchini lengthwise and scoop out pulp. Lay cut side down in a microwave-safe dish and nuke for 6 minutes. Chop remaining pulp and add onions and butter. Nuke this mixture for 5 minutes. Add tomato and 3/4 C cheese and nuke for another minute or 2. Fill zucchini with this mixture and top with ramaining cheese. Nuke again to melt cheese.
This can also be made more potluck friendly by slicing the zucchini into 3-4 pieces and pouring the mixture over the large pieces of zucchini. Again, top wwith remaining cheese and nuke.
