  • Devilled Egg Salad

    This is sooo easy and it's sooooo delicious.

    One serving is usually about 3 eggs, so scale this to the size of the crowd you'll be feeding.

    One serving
    3 hardboiled eggs, peeled and halved longways
    1 Tbl Mayo
    1/2 tsp Paprika
    3/4 cup sliced black olives
    3/4 cup shredded cheese

    Pop yolks out of egg halves, crumble in a bowl with fork until they resemble bread crumbs. Mix with mayo and paprika until you have a creamy mixture.
    On a cutting board, chop egg whites into pieces. Fold diced egg whites into mayo/yolk mix.

    In your serving bowl, spoon 1/3 of the mixture in the bottom.
    Layer half the olives and cheese on top.
    Spoon another 1/3 of the egg mixture onto the cheese.
    Again, layer with remaining cheese and olives.
    Top with the remaining egg mixture.

    If desired, top with cheese or more paprika.
    A wonderful alternative to usual eggs, and a wonderful topper for a garden salad.
