You can make savory dips and creamy fillings for crunchy munchies like celery sticks, jicama slices, pork rinds and low carb crackers or crisps. Use a base of cream cheese, sour cream or both and add savory or sweet flavors as you like. Get some creative ideas and post them to this thread!
Pepperoni Pizza Dip
2 oz cream cheese, softened in the microwave
1 oz finely grated Cheddar or good quality American cheese
1/2 oz pepperoni chips
1/2 tbsp tomato paste, low carb ketchup or sun dried tomato puree
Sprinkle of garlic powder
Italian herb seasoning (or a pinch of thyme and oregano)
Place all ingredients except the pepperoni in the food processor and pulse until well blended. Add the pepperoni and pulse until coarsely chopped.
Warm up the dip (do not make it too hot) in the microwave or over a double boiler, and stir until it is soft and creamy. Allow to cool. You can fill celery sticks with this mixture, or spread it on baked cheese crisps. There are approximately 4 carbs in this recipe as printed, most of which come from the tomato paste.
Cinnamon Cream Bun Dip
2 oz cream cheese, softened
1 tsp powdered cinnamon (or to taste)
1 tsp granulated Splenda (or to taste)
1 tbsp full fat sour cream
1 tsp sugarfree flavored syrup (caramel works well)
Blend all ingredients thoroughly. This dip is great with jicama slices, reminiscent of a creamy caramel apple. Try it with unflavored pork rinds.
Strawberry Decadence (not for Induction)
5 medium strawberries (about 1/4 cup)
2 oz cream cheese, softened
2 tbsp full fat sour cream
Splenda to taste
Combine the cream cheese and sour cream in the food processor bowl until well blended. Sweeten with Splenda to taste. I rarely use more than half a teaspoon. Add the strawberries and pulse a few seconds at a time until coarsely chopped. This is a great way to stretch your fruit allowance and get a lot of fruit flavor for not too many carbs. Serve with unflavored, unsalted pork rinds if you can find them, or with low carb crackers. Or just eat with a spoon.
Salmon Snacks
2 oz smoked or cooked salmon
2 oz cream cheese, softened
Garlic powder, cracked black pepper or other spices to taste - dill goes well with salmon.
Finely chopped celery is an optional addition.
Combine ingredients in the food processor and blend. You can leave some texture in the salmon for a chunky dip. If you are using the celery, add it and blend well before adding the salmon. I like this one in celery sticks.
