  • Chocolate...almost

I'm sure people have posted this a million times before but since I can't find it I thought I'd write it down.
Recently if I have a sweet craving and very few carbs left for the day I make the chocolate bark thing but I seem to have perfected my first few flawed attempts...
    2tbs coconut oil, melted
1tbs cocoa powder (Sharffen Berger unsweetened is my new best friend, 2g total carbs per tbs with 1g fiber so 1 net. Very rich and deep flavor)
1/2 to 1 pkt Splenda, depending on how sweet you like it
About 4 tbs flaxseed - up to you but I like a lot. Ekes it out.

Mix together really well and then either: put in chocolate moulds for something you won't know isn't chocolate.
Or: I flatten tin foil over a small plate and pour the mixture onto it so i's thin but not too thin.
Freeze for as long as you can resist.

Net carbs: 2 if you use flaxseed that accounts for all carbs with fiber. Plus it's quite a lot so may last you two snacks.
Variations: Add nuts, blueberries, coat a strawberry for that Godiva chocolate strawberry (just leave out the flaxseed). Another yummy idea is to ball peanut butter, put in the freezer then coat the small balls with liquid choc and freeze.
