I'm in the middle of reading The Apprentice by Chef Jacques Pepin. I just came across and interesting paragraph regarding how he and his wife shaped their daughter, Claudine, attitude toward food.
The last sentence I find very interesting....are veggies hard for some of us to eat because we've been programmed to believe they are such a challenging food that we need special recognition for being so brave to eat them?
Sitting down for dinner around a well-appointed, well-set table was from the beginning part of our daily routine. It was a time when school and other happenings of the day were discussed and debated--not always pleasant, but essential to Claudine's growing up. Except for very spicy food, she was served exactly what we ate from the time she was an infant. When she didn't like something, we barely acknowledged the fact. Conversely, when she ate spinach, broccoli, or Swiss chard, we never congratulated her because we didn't want her to feel that she had done something special.
