    Okay, here is the deal. I did Atkins with great success back in 2003. I made the mistake of sticking to Induction for too long. Yes, I lost 60lbs, but I fell off the wagon. Not only did I regain the 60lbs I lost, I added another 30lbs for good measure. My biggest problem is veggies. I grew up in a veggie free home, it was all meat and potatoes and snack food. Which is why now I am almost 300lbs. I am starting induction tomorrow and with the exception of corn and carrots (both of which are no no's) I intensely dislike all veggies. I heard somewhere that if you try something 6 times you can trick yourself into liking it, but so far no dice. I can't even choke down celery sticks. I can handle lettuce, but that will get old fast!!! I've been scouring the recipes but am feeling a little overwhelmed. Any ideas would be greatly appreciated. I will succeed this time!!!

    Jicama. Tastes sort of like a non sweet apple.
    Also, grilled onions. Oh they are sweet like candy
    Mushrooms? Cooked in butter?
    Japanese Pumpkin. Oh yumm, Its green colored. Cut it in half and bake it in the oven.
    If you like mashed potatoes Go get a bag of cauliflower (frozen) and nuke it and drain it and dump in some butter and cream cheese, salt and pepper and mash it well. To die for.

      I was also a veggie hater with a few restrictions. Have you been to Linda's low carb? Did you know pumpkin is one of the other vegetables? There are lots of recipes for pumpkin sides like Pumpkin Custards and the like. Spaghetti squash and tomatoes are also on the other veggie list. There are plenty of low carb recipes for veggies, and even better your tastes bud will begin to change on low carb -- making more veggies platable due to their newfound sweetness.

        Thanks for the great ideas. I think most of the problem is that I have no idea how to cook them, but that's what the recipes forums are for!! I will have to try some of these and keep you guys posted. I like pumpkin, can I used canned pumpkin or does it have to be fresh? I've never managed to choke down mushrooms, but the jicama and cauliflower sound interesting. I plan to be posting a lot so I will keep you posted on how I am making out veggie wise! Thanks again.

          re: Pumpkin. It can certainly be canned -- I know of few people who would go through the work with dealing the raw stuff daily. Just remember the different daily limits on the "salad" vs "other" veggies. Another popular salad veggie that people don't think of are peppers. I throw peppers and onions often into easy stir frys or impromptu fajitas.

          Have a look to Linda's Low Carb Recipe site -- she annotates all her recipes and ranks them to how good they are. Start with some of her 5-star veggie recipes and start building the stash of low carb comfort foods.

            welcome to ADBB and back to Atkins.

            hide the veggies. make a meat loaf or meat balls and puree some veggies up in the loaf works great for any type meat. stuff some peppers with a spicy meat mixture. do you like chili? omelettes? you can shed mild flavored veggies up and add a few there too. as you get used to having a few in there add a few more in a week or two and soon you will be there.
            purree cooked veggies and make a dip or gravy. cookec musrooms, celery and onions make great gravy.

            make soup or pot roast.

            did you know if you boil radishes the hot taste is gone and you can dice them for a potato salad type dish.

              LOL, Cheese drizzled all over the veggies is also a great way to mask their taste. Jicama you can eat raw.

                  Hey guys Tomatoe is not a veggie! It's a fruit!

                  In regards to veggies - don't get hung up too much on them. Especially if it means you want to abandon the program because of it.

                  Using sauces helps.

                  Frying mushrooms in butter with garlic salt.

                  What I do sometime sis chop up my veggies - snow pea sprots, onions, mushrooms, capsicum etc - and fry it with my steak...and CREAM CHEESE!

                    Hope you dont mind me chiming in here ..but I read this thread and had to say something!!!!....first ...I want to congratulate you on your efforts to keep trying this and to get to know and love veggies!
                    I completely disagree with Dave ..you must eat your veggies andyou need to get hung up on them!!! If you can not eat them then this plan is not for you..it is very limiting as it is especially the inducton phase....
                    and yes if you only eat lettuce you will get bored and be undernourished ....if you want to loose your weight and keep it off you must learn to love veggies!

                    you need to eat vegetables ....if you want to do this correctly ....

                    print off the list and try them one at a time 3 cups a day is not too much ..and visit the cooking chat to find out how to make them the way you like them ...

                    you can make smoothies out of pumpkin
                    drizzle olive oil on them and roast them
                    mix several together after steaming and marinate them in Italian dressing and add cubes of mozzerella
                    you can have avocados in guacamole
                    you can make tomato salsa
                    spread cream cheese on a sweet raw red bell pepper and see what happens?
                    omelets are good

                    there are endless options ...keep tryinig and again visit the cooking chat and just say "help me learn to love veggies" and people will

                    good luck!!!

                    personally I give a food 3 chances 3 differing ways if I still do not care for it ..(and that is rare) I quit with it and try it again in a few months...

                      Thanks for all your suggestions. I hit the grocery store for some cauliflower, turnips, alfalfa sprouts for a start and been hitting the recipe board for inspiration. I will learn to love veggies because I want to be successful, this time around.

                        I learned to like veggies. I didn't happen overnight but it did change. I actually get cravings for them now.

                          Good for you!

                          We had curried chicken with caulirice tonight - my DH actually prefers it to 'normal rice'!
                          Wondering how to get 'most' of your net carbs from your induction veggies?

                            Since you don't like veggies, you might try frying or sauting them. That way you have the fat there to help flavor the veggies. One of my favorite veggies right now happens to be snow peas sauteed in butter with some no-salt (or whatever it's called) sprinkled on them.

                            Try dipping your veggies in ranch dressing. Radishes, cauliflower, broccoli, peppers... YUM!

                            How about "breading" some zucchini or yellow squash in a little bit of flavored parmesan or pork rinds and frying them.

                            Or try cutting up some cukes and some onions (easy on the onions in Induction) and then adding half vinegar and half water, a little salt and pepper and let sit overnight to flavor. Very yummy!

                              Lindsay--I threw you some "reputation points" because this is the best thing I've heard on this board ALL WEEK! With that attitude, you WILL be a success this time around!!!! Come hang out in the food and cooking chat...it's great there and we can do all sorts of things with veggies !! I had to break out the dancin banana for this post LOL
