  • Who knew I would actually WANT to eat cauliflower!

    So I have been an avid cauliflower hater for a long time, I couldn't stand the smell or even the sight of it. But I was tired of the same old veggies day in day out, and wanted to find something else that I could use to get in my veggie content. Well, I broke down and tried the mock mashed potatoes made with cauliflower. And..................................HOLY MOSES!!!!! It was awesome! I mixed in a little cream and butter like the recipe said, and it was amazing. I barely tasted the cauliflower taste, it was just creamy and buttery goodness! I don't think I can eat just regular cauliflower, I'm gonna have to stick with this recipe, but its great to have a new veggie on the list that I actually love to eat. Just wanted to share in case there was anyone out there like me who seriously doubted that cauliflower could substitute mashed potatoes, let alone, taste halfway decent.     It's amazing what we taste once all of the sugary, floury stuff is out of our systems! Have you tried cauliflower rice yet? I can't believe the amount of cauliflower I go through in a week!

                I made yummy mashed califlower today with a small dash of sour cream, butter, salt, pepper, garlic, and parlsey. It was awesome! well it still is as I have enough for several days! Will fry some up tomorrow with my eggs... as faux hash browns... yummy.

                  Hey guys! Thanks for all your feedback, could I maybe get some recipes from you to try different things with the cauliflower? I NEVER thought about frying it up as faux hashbrowns, THAT is a great idea! What is this mock-a-foni and cheese? I'm interested to try it! Yay! I'm so excited at all the new possibilities!!!
