As Shrew pointed out, your net carbs from vegetables are too low. Choose more nutritious vegetables from the Acceptable Foods List instead of 2-3 cups of lettuce. Things like peppers, jicama, pumpkin, green beans or Brussels sprouts are higher in carbs.
Also, remember that over half of your net carbs should come from vegetables.
Did you really have "cheese food, cold pack, american"? This stuff is junk. Eat real cheese instead, not "cheese food".
Did you check the ingredients in scrapple? If you bought it, I'm pretty sure it has non-Induction ingredients.
If your menu for yesterday is complete, then your protein intake is too low. You need more protein, veggies and fats there.
Your calories are too low. At 5'9" and 285 lbs, you need more than 1400-1900 calories. Your BMR is over 2000 calories per day... and these are only the (approximate number of) calories your body needs for basic things like breathing, heart beat, temperature regulation, etc. Add to this daily activity and exercise... and you can see why you're hungry. You are actually undereating.
