  • Bahamas anyone?

    Definitly a challenge here since eating out is breaded and fried everything! Cracked conch, crack lobster, you name it! And fritters of course! And all the side dishes...Bahamaian mac & cheese, peas and rice. UGH!

    Shopping isn't much easier as I'm on Andros (central not North) so the stores are pretty small and the selection REALLY small and not too Atkin's friendly.

    I do get to travel to the states some and stock up at the store on meats and frozen veggis, and of course we catch some of our meats (grouper, wahoo, mahi/dolfin, conch and lobster).

    Just wondering if there are any other islanders on here or not ensive and if you have any Atkins friendly recipes to share!

    Hi, great to see you here. :wave Not from the Bahamas but I can identify with the food issues. I am surrounded by rice and peas (beans and rice to you), plantains and such delights. I also found that on my visits to Nassau veggies were not in sight!! I do have lots of Caribbean Atkins Friendly recipes so let's party!! :icondance :icondance

      Any recipes you want to share I'd love to have! Especially ones with conch...got a freezer full and don't know what to do that is Atkin's friendly ensive . Will miss my crack conch :sadblinky

        Escoviched conch might be nice. Conch with vinagre, hot peppers, carrots and onions toss and served over a bed of thinly shredded cabbage.

        Curried conch with cauliflower "rice".

        Conch fritters with egg rather than flour as bonding agent.

        Low carb pizza with marinated conch. This is OWL friendly. I don't like soy flour alone so I mix with whole wheat flour or even baby cereal. This pizza recipe I got from food network's low carb 'n loving it show.

        "Sweet" and sour conch - use splenda, soy sauce, sesame seed oil, season to taste toss, serve over bean sprouts.
