Angel Food Cake, Low Carb Serves: 16

10 egg whites from extra-large eggs
          1/2 tsp. salt
          1-1/4 tsp. cream of tartar
          1/2 tsp. almond flavoring
          1/2 tsp. vanilla flavoring
1/2 cup unflavored or vanilla flavored whey protein
          1/2 cup barley flour
          1-3/4 cup sucralose-type sweetener, divided

Whiz 1 cup of sweetener in the coffee grinder to make it like confectioners' sugar.

Preheat oven to 375°F. Beat the egg whites and the salt on high speed until just frothy.

Add the cream of tartar and flavorings and beat until soft peaks. Don't over beat; it could make the cake dry and crumbly.

Add the whizzed sweetener, a little at the time and continue beating until well incorporated.

In a separate bowl sift together the remaining sweetener, whey protein, and barley flour. It is best to sift it about 3 times.

Sift about 1/4 of the flour mixture over your egg whites and fold with a spatula, not with an electric mixer! Continue until all the flour mix is well incorporated.

Pour into an ungreased angel food cake pan. Once all the batter is in there shake the pan a LITTLE to settle the dough and release any air bubbles. You could also just "cut" the dough lightly with a knife (don't cut too deep or you will damage your pan!) Bake for around 35 minutes or until a toothpick inserted comes out clean. After taking your pan out of the oven, invert it (upside down) on a plate or the counter top and let it cool this way. Once cooled the cake will come out quite easily.
Nutritional Info Per Serving: 4.7g carbs; with 6g protein per slice.

            MOCK ANGEL FOOD CAKE

1 cup oat bran -- flour
            1 1/2 cups splenda
            1/4 tsp salt
            12 egg whites
1 1/4 tsp cream of tartar
1 1/4 tsp vanilla extract -- or to taste

Sift flour with 3/4 cup of splenda four times. Beat egg whites with cream of tartar until soft peaks form. Add remaining splenda in thirds beating well after each addition. Sift flour in fourths into egg whites folding carefully with each addition. Fold in extract of your choice. Use vegetable spray to coat sides of 10-inch 250mm angel food pan. Pour in batter. Bake in preheated 375°F-190°C oven about half an hour, or until golden brown. Loosen sides with a knife, turn cake out onto cooling rack. It's easier to slice on cooling rack. Makes 16 3 carb servings...this is minus the fiber. It's wonderful with whipped cream which adds one carb per tablespoon.

Re: The Never Ending Recipe Thread

I went to search for this recipe that I found last year and found my own post here! Crazy! Anway...here it is...

                      (aka Maitre d'Hotel Butter)

This is not my recipe...found it on the web but I can't remember the addy. Anyway, on a whim I made this and me and my husband love it! It really adds flavor to steak without hardly any effort!

                      Ingredients:

1/2 Cup butter (softened at room temp)
                      1 Tablespoon Worcestershire sauce
2 teaspoon (3-4 cloves) garlic, blanched and minced (I sauteed mine)
                      1 Tablespoon parsley
                      1 Tablespoon parmesan cheese

Blanch garlic by placing unpeeled garlic cloves in boiling water for 5 minutes then peel-gives garlic a milder, smoother flavor. (I like strong garlic, that's why I sauteed) Mix all ingredients in a food processor (or bowl) Form into a log and wrap in foil or parchement and refrigerate. Melt over steak or filet mignon.

*I put mine in parchment and when we have steak we just slice off slabs like we would with butter until the steak is covered to our liking*
