Re: Check out these bad boys! Cheese Danishes!

I just made some, using the 1/4 tsp cream of tartar. Just had my first "sandwich" in ages! Tuna salad sandwich. They'll make great buns for burgers, hot dogs and all!

    These are great!

Perhaps whipping the egg whites with cream of tartar first before folding in the yolks would help. Also, using a non reactive utensil to fold in egg white helps eggs keep there loftsomething like a silicone spatula or a wooden spoon even would work well for folding in eggs whites to something else. And room temperature eggs whip the best rather than cold from the fridge. Just a few observations. I am sure these things would help substacially. I don't know the carb counts for cream of tartar, so if you leave it out that would be fine if you follow the other suggestions. Non reactive bowls help the whipping process too. (I use plain old tupperware plastic or a copper bowl my grandmother gave me if I am whipping with a whisk by hand.)
These are excellent tips. I did just as hubbys_girl suggested and they turned out great.

I haven't been to the shops yet, but I've never seen Cream Of Tartar on sale. Who makes it (bearing in mind I'm in the UK!)

Cream of tartar can be found in your spices section..I would assume.. The brand I have is McCormick.

It should be in the 'baking' section - along with baking powder.

And just for the sake of saying, because I know you're all smarter than me, make sure you don't add too much Cream of Tartar....it'll be a bit bitter if you do (LOL). Live and learn!

Yeah, I agree with apple, 1/4 of a tsp should be plenty of the CofT.

Cream of tartar is also available at bulk food stores. That is where I buy all of my spices and supplies. you can get small quantities and that means fresh spices more often. It keeps things from going stale..... and gives better taste results and more activity to your leavening agents.

These rock - just made them. turned out really good.

I have also found that a silicone baking sheet sprayed with pam is really good (I keep forgetting to get parchment paper).

Can't wait to try them with cream cheese and bits of ham.

I just made these last night, and messed up the first batch pretty badly. But I let the eggs sit out for a bit the second time and they whipped up beautifully. They were awesome! Im so thankful to have something to eat for breakfast other than scrambled eggs. And I cant wait to have a sandwich!!!! Yay!

Sure thing! I actually was able to get myself to the store today to get some of the yummy extract ValidRouge recommended (thank you!) and the cream of tartar..I felt like a nit b/c I had no idea what it was or what it looked like. Thank God they were in alphabetical order! LOL

So I will be making these tomorrow morning before the kids get up when I will have a few minutes to myself!

                              How did yours turn out??
