    It works REALLY well with a dehydrator, so if you have one, use it post baking! These are amazing! I use them for everything from munchies to nacho chips for nachos.

    Of course, do mind the serving sizes, and if portion control is an issue, bag up the individual servings and put them aside.

    Oh! And make sure to squeeze out the shredded zukes well.

    These are beefy, crunchy chips. Love 'em! The ranch flavored popcorn salt and nacho cheese are my faves with the chips.



    Oh, and you can make them with cauliflower, too. That recipe is at the link with my blog. (I didn't want to post almost two exact recipes).

      I already read the cauliflower one, and I think I'll stick to zucchini due to a lower carb count. I do have a dehydrator and will use it for these. I would also be willing to bet that there is a time in the 6-8 hour cooling time that they are firm enough yet pliable enough to use as tortillas. I would also bet that they could be fried in olive oil and be made faster. I think I'll experiment with throwing some milled flax seed in there too to boost the fiber content. The possibilities are overwhelming me right now. Thanks so much for the recipe.

        I have recipes for tostada shells, taco bowls and crunchy taco shells, too! They're at the blog that the link leads to. I'm asking now if it's all right to link to my personal blog here. I have about 150 recipes there, most induction friendly. I don't want to violate TOS here, though I would guess if we can link to Linda Sue's site, mine should be fine really.

            Hi there! Thanks so much for your kind compliment! I asked Elizellen to make sure linking to blogs is ok. I know it is fine at ALC and LCF, but each board has its own TOS.

            I am working on a ton more recipes now, most of them induction friendly. That just seems to be where I most enjoy what I'm making. I love to cook almost as much as I like to eat.

              I'm also a crunchy salty person - I can leave sugar alone but man, salty crunchy things are just what I love to eat!

              The cheese crisps work really well for me (try all sorts of different kinds - making them with romano is really fun).

              But, because they ARE my weakness, I'm very careful right now as I learn to eat working through OWL because I can see myself getting into portion control issues really quickly.

              We crunchy-salty people have the same problem our sugar addict friends have, so be careful!

              (Cleochatra - I also peruse your blog, haven't done it in a while, don't recall seeing that recipe but I will try it very soon!)

                I only really just rearranged and indexed all recipes on the blog, so they were missing for awhile and then disorganized for some time after that. I am a lamer.

                  Nonsense, you are (along with Linda Sue and a lot of people here on ADBB) one of the life-lines for those of us who are cooking impaired!

                  My cooking skill amounts to:

                  Get food
                  Put in pot
                  Turn on heat
                  Cook until hot
                  Eat

                  Or even:

                  Get food
                  Zap in microwave until hot
                  Eat

                    Of course! Are you still in Denver? I'm up by Fort Collins. I'll be waiting for your recipes! Do you like California rolls (sushi with cooked crab)? Check out my recipe in main dish forum....they are AWESOME!!!! I love em!

                      Skeptika-- I was raised by a mum who had scorch marks on the front of her cook book. I really taught myself. I cooked like you, only mine was more like, open can, insert spoon. lol

                      lindsay! I did see it! It looks wonderful! I am a major fan of onigiris and bento and ethnic cooking. I even have my own sushi rolling mat and nori. I did make sushi with nori and cauli rice once some time ago, but never replicated the recipe. I'll check yours out again. I love Fort Collins. Texas Land and Cattle is the best steak joint evs.

                        Oh - I wanted to second the pepperoni chips for salty-crunchy, but just don't eat a WHOLE bunch of them, because it's a sodium load... but it sure does hit the spot.

                          Thank you for the great suggestions! I am definitely going to try to make the pepperoni chips, and the zucchini chips sound so good!

                          And thank you for not passing judgment on me for re-starting Induction. I am sure I am not the only one that struggles from time to time.

                            I love crunchy-chip like too. I have made the pepperoni chips. They are sooo good and easy to make. And there are brussel sprout chips too--I couldn't find the recipe that I used, but I'm sure it's here somewhere; I'll look for it. I also made the cauliflower popcorn and should eat that every day--yum!

                                Hmm I think I might want to try the zucchini chips. They sound yummy. Has anyone tried fried pickles yet? I have had some really good ones, but these had breading, so that is a no go.
