  • Breakfast / Lunch @ Work... Ideas?

    Hi there... I'm on day 5 of induction, and so far I've been doing really well. I'm very proud of myself actually, because I thought for sure I would REALLy want to cheat by now.. But I haven't.

    The issue I'm facing now though, is coming up with ideas for meals to take to work. Mostly I've been having salad with veggies & deli style turkey, water, and sometimes an exta in there, I have meatballs for today. Breakfasts are usually consisting of hard boiled eggs, or veggies & dip etc.
    But, its getting old... I don't mind eating the same things all the time, but its getting boring.. I'd like to have a little more selection.

    Can anyone offer any ideas? I'm not a big seafood eater... I like canned tuna, and I've tried catfish.. liked that.. but thats about it.
    Any ideas, etc would be appreciated!

    I tend to go for wraps at lunchtime. Meat and cheese rolled up in a lettuce leaf with a little Hellman's mayo. Either that or a cheeseburger minus the bun. (I'm not very creative). You don't have to eat traditional lunch foods at lunchtime. Take some leftovers from last night's dinner. Check out the recipe threads here to get a lot of ideas.

      I also enjoy wraps or a salad with grilled chicken. I cook steaks medium rare so I can nuke them without turning them into leather.

      Deviled eggs are a fave of mine as well. If you don't have a special deviled egg container, you can put the filling in a ziplock bag and the eggs in another. When it's time for lunch - cut off a small corner of the bag and pipe the filling into the eggs. No mess, no fuss.

      Just use the list and your imagination.

        I'm a big leftover person. I make extra of whatever we're having for dinner, and that is my lunch!

        The crustless quiche recipe that's in the back of DANDR is great too, you can bake one on the weekend and then cut it into portions and put it in ziploc bags for your breakfasts or lunches during the week, 45 seconds in the nuker and its ready to eat! And its great cause you can vary the veggies, meat and cheese in it to make it a little different each time. Like cheese, hamburger and bacon will be like having a bacon cheeseburger, or sausage, bacon and swiss, you get the picture.

            Im on day 4. Today I brought 2 turkey burgers (cooked last night with seasoning), romaine lettuce leaves, mushrooms and mozzarella cheese for gooey cheesy mushroom burgers wrapped in romaine.

            Day 3 I had the BLT Bowl listed in the recipe section. (chicken breast, bacon, lettuce, tomato. I added radishes for more crunch and mixed it with ranch dressing instead of mayo).

            Day2 was leftover steak (seasoned) heated up and mixed into a salad with cucumbers, lettuce and tomato and ranch dressing.

            Day 1 was also a salad. with tuna and dill pickles.

            So far its been different enough every day that Ive not gotten bored eventhough Ive only changed a few ingredients. I look forward to lunch now and even more to making it the night before so I can just grab it and go in the morning.

            Im of no help for breakfasts because Ive been eating hardboiled eggs also. Im thinking of making a fritatta this weekend though to give me something different to try.

              Does your work have a cafeteria? We do, so I sometimes get a veggie omlette or bacon when I forgot to bring food. It helps mix it up from hardboiled eggs (I don't have time at home to eat there or there would be more variety)

                Wow!! Thanks for all the ideas, this is great..... Dumb enough, I never even considered having burgers without the buns!! OMG.. that would be SO good! As well as the crustless quiche! YUM!

                My work does have a cafeteria, but its a hospital, so a very limited menu, and some things are better than others... The silly part is, the junk food (ie, fries, onion rings, gravies, sandwiches) are ALWAYS available, and the other stuff varies... we do have a salad bar too though.
