You could use flax seed in recipes like the mock danish. Or resort to Psyllium husks. It would be much better if you would try a few veggies to get the most bang for your buck all the way aroung though!

I'm actually a big fan of red and green peppers. I have no problem with just 1 veg in my diet but do you think the lack of variety will be harmful

        Yes.

Vegetables not only provide us with fiber, they also provide us with vitamins and minerals. Since many of us come to Atkins after years of poor nutrition, we are essentially vitamin and mineral deficient (which is why Dr. Atkins insisted we take vitamin supplements.) Unfortunately, vitamin supplements are only that supplements. They are not replacements. Moreover they only provide certain vitamins and minerals.

There are about 54 vegetables on the Induction Acceptable Foods list. You might want to explore the other 53 vegetables in order to make your diet more nutritionally complete.

Also, the 3 cups of vegetables you eat during Induction are your minimum daily vegetable intake for the remaining Atkins weight loss phases and during Atkins maintenance phase. But the time you get to Maintenance, you'll be eating about 6-8 cups of vegetables daily.

On Induction alone: broccoli (10 grams for a small stir-fry bag), cauliflower, and pumpkin just to name 2 vegetables ... and 1 technical fruit. Also, there is always psyllium husk at a whopping 8 grams of fiber per tablespoon (Country Life brand), and ground flax seed at 3 grams per tablespoon. If you are creative and focus, it is very easy to meet and even exceed the daily recommended fiber - and yes, even on Induction.
