  • A birthday with no cake?!

    I'll be 18 in 3 days, and sticking a candle in a hotdog just doesn't seem celebratory enough.

    Are there any induction-approved birthday cake substitutes or recipes for one? I loves me some cake.

    The Low-Carb shops around my house are more expensive than the house itself and don't carry much at all, so there's a slim chance of getting ahold of any Atkins bakery items or Atkins baking flour.

    Please help make my 18th birthday a delicious one.

    Missing.... go hit up the recipe forums. There are goodies for making lowcarb CHEESECAKE!, the pumpkin roll, brownies etc etc. I'll be 30 in ~2 weeks, I never loved cake but I assure you Im making my 30th one to remember!

      cheesecake is very easy to low carb. You can take any regular cheesecake recipe and substitute sweeteners for the sugar. I'd recommend making a crustless one if you're in induction. After induction...you can make an amazing crust with ground pecans/hazelnuts etc.

        I did custards on my birthday last year. Cheesecake sounds great too. I posted a one-minute one-serving chocolate cake in recipes, but it does require a nut flour which is not for induction.

            no bake cheese cake pudding with strawberries, blueberries, raszberries with whipped cream on top. Feels like cheating, but isn't. I plan on cheating though....DOUBLE SERVING BABY OMG. Sooooooo good....and easy to make.

            Mix equal amounts of cream cheese, sour cream and whipped cream until nice and creamy thick, adding splenda until mixture is nice and sweet. Stick in the fridge for 1/3 an hour. Top with the berries and whipped cream.

              OK - I might get 'wacked' for this... but in Dana Carpender's book, "How I quit my low fat diet and lost 40 pounds" she has a chapter about 'cheating'. In it she makes the point that we are all going to have 'slip ups' every once in a while. She thinks that the best strategy is to plan for these slip ups ahead of time.

              So, her idea is that you give yourself like 3 days a year that you call "Indulgence Days". Those days you PLAN to have something that is a no-no. Then you don't feel bad about it, you can have some protein before the no-no to offset the blood sugar impact (and horrible feeling later in the day or the next day), and you can enjoy it while your having it - with none of the "Well, I screwed up again - I can't do anything - I guess I'll just quit.." kind of mentality that can (if you are one of the people - like me!) totally ruin a perfectly good WOE.

              Anyway - I'm not advocating that anyone eat a bunch of garbage. I just thought that planning for an "Indulgence Day" makes it much more likely you won't slip on other days - and let's you have those few days as something to enjoy - and not feel guilty about.

              Happy, happy 18th birthday! You have so many exciting things to come in your life - and what a fantastic thing it is that you are so mature as to make these changes for a healthy way of eating! (I know lots of teenagers who opt for the starvation/diet pill routing which gets you were I am. Overweight, slowwwwwwwwwwwwwww metabolism, and still trying!)

                Celerbrate your birthday with style. Give yourself the best birthday gift ever and don't make anything the resembles a cake...go buy a pair of shoes instead! It'll be a great start to keeping the focus off of food during special events and focus on the important things like shopping

                Every 18 year old gal can't have enough pairs of shoes...okay, I'm 33 and I still don't think we can every have enough pairs of shoes.

                If you think you'd rather have something to stick a candle in, how about whipping up some homemade "cool whip" and eat that with some fresh berries? ----and then go buy a pair of shoes.

                  I had a mini creme brule' for my bday... Atkins style of course!

                  Started Dec 2005 and lost 105 lbs by mid 2006, maintained loss for the most part until 2009...then really let go & gained some back... lol

                    Heya Kacey,

                    I actually thought about doing that, for my birthday, christmas, and thanksgiving. But what made me nervious was, several months ago at work a co-worker brought in a bunch of donuts, and I caved.

                    I had a huge maple bar and it tasted sooooooooooo good...until it hit my stomach. Then I got the awful gittery "I had a ton of suger" high, and then I crashed about 15 minutes later and felt tired and miserable, and there was the guilt thing, and I got worried about gaining weight the next day. In the end, 3 minutes of donut wasn't worth the aftermath, but that's just me. :P

                    What I decided to do, was stay on plan, but for those days, I wouldn't worry too much about serving sizes of the low carb goodies planned (half the time they handle themselves, you can't eat too much cream cheese before you have to stop!), and especially for thanksgiving, I am going to make sure there are a ton of different low carb goodies available.

                    I am EXTREMELY fortunate that my entire family is on atkins. I plan on having my no bake cheesecake pudding with berries, low carb pumpkin pie, suger free jello with coconut, nuts, whipped cream, etc along with all kinds of awesome LC foods for Thanksgiving.

                    Just my take on it, other opinions good too.

                      A cheat, be it planned or unplanned is still a cheat and I am totally against that.

                        Rich - I agree! I agree! For some people though - a cheat means a failure which means an end... So, my thoughts were that if you knew a 'cheat' was coming (2 or 3 a year) you might be able to hold out saying to yourself, "If I HAVE to have that piece of cake (bowl of ice cream, Danish pastry, etc.) - I will do in on one of those 2 or 3 days and not as an impulse." In which case you would be able to plan better - and maybe end up not 'cheating' at all.

                        So - I DO agree with you. Just maybe a different way to look at it!

                          I had cake on my birthday! It was in May. My husband secretly stopped at Ruby Tuesday's and picked me up a slice of their low-carb cheesecake. They told him they were phasing it out of their menu and it was one of their last cakes! Too bad, it was good.

                          I hear the Cheesecake Factory has a very good low carb cheesecake. It's worth checking into if you really want a "cake" "cake".

                            I cheated for my birthday....it was this past Sunday....my precious 4 yr old daughter left the day before for 2 wks with my ex.....it was heart wrenching...I was saddened by how she fought going...how she didnt want to go...and I was saddened by the fact that I was all alone..no friends no family no nothing....I cheated....I bought myself one slice of double fudge chocolate cake for my birthday....wasnt as good as I remembered it to be and then it gave me the runs...HA...happy birthday to me huh?

                              You can have your cake and eat it too, INDUCTION LEGAL!

                              Pound Cake (low carb)

                              6 eggs
                              6 egg yolks
                              1/2 cup Splenda + 1/3 cup fructose (or replacement of your choice to equal 1 cup sugar)

                              3/4 cup whey protein (vanilla or plain), sifted
                              2 tsp baking powder
                              1/2 tsp salt

                              1/2 cup melted butter, cooled
                              1 tsp. vanilla extract (use 2 tsp. if whey protein is unflavored)


                              Preheat oven to 300 degrees.

                              Stir together eggs, yolks, and sugar replacement in a large mixing bowl.

                              Place the bowl in the top of a big soup kettle containing 2-3” hot water, but not enough to touch bottom of bowl. Place both over low heat; water should not boil.

                              With an electric mixer on low speed, beat the mixture continuously as it warms. Finger test the eggs for warmth—when you dip a fingertip and only a single drop “drips”, remove from heat.

                              Now beat at high speed for about 15 minutes, or until the mixture cools and is very fluffy; it will be about triple in volume, with a whipped cream consistency.

                              Sift together the whey protein, baking powder and salt. Sprinkle sifted combo over the egg cream. Add vanilla and melted butter a little at a time, folding all very gently into egg mixture.

                              If you have a nonstick pan, this is definitely the time to use it, as this will stick unmercifully to anything that isnt. If you do not have nonstick bakeware then you should *Generously* grease/butter pan(s)--2 loaf or 2 small cake layers. After greasing, it’s helpful to use 2 or 3 lifting strips of waxed paper (2” wide; length = width of your pan plus twice the depth plus an extra 2-3 inches), centering each in the bottom of the pan, bringing length of strip across the bottom, and up the sides of pan, with the ends folded over the outside top edges. Grease the top surface of these papers also, so they won’t adhere to the cake bottom.

                              Pour in the batter. Bake in a 300 degree oven about 25 minutes, or until cake is lightly browned and begins to pull away form the sides of the pan. Then remove from the oven, lift out of the pan(s), and peel off lifting strips ASAP.

                              Each cake will be about 1-1 ½ inches high, with a pound cake’s golden color, dense texture, and flavor.
