  • desserts - pick-me-ups

    hi guys,

    can anyone suggest easy 'pick-me-up' desserts or sweets? ive been cooking my main meals, (based on the atkins cookbook) and when it comes to desserts, i just wanna have sweets that are easy, convenient and no preparations at all.

    i have a really sweet tooth and while i am very much willing to do this whole atkins thing, i need to do it gradually. something to satisfy my cravings would be good enough.

    if you guys dont think there's anything as easy a 'pick-me-up" desserts, then at least suggest something thats VERY easy to prepare.

    btw, im in the INDUCTION phase.

    What I eat. Especially during TOM (time of month).

    Put ice in blender
    add cream (a little bit, up to you)
    add splenda (about 2 teaspoons)
    blend together and then put in bowl and freeze for about 30 min

    (Mock ice cream)

    Sometimes especially when I am craving chocolate during TOM I add a dash of sugar free chocolate in the blender (it takes the edge off) but dont make a habit of it

    I really enjoy this, and it has really saved me from cheating

      One thing I've done is take cream cheese, pour 1/4 t. maple (or other flavored) extract over it, then a pack of Splenda and mash it all together.

      It REALLY satisfies a sweet tooth.

      However, I learned the hard way that it also triggers cravings for more food later on. It may or may not for you.

        Sugar free Jello is good but I got tired of it pretty quickly. What I do like was heavy cream whipped up with a little sugar free hot chocolate powder (check the brands as some have less carbs than others). Its really rich and I could only eat a few spoonfulls and was completely satisfied.

          For my husband on induction I made mini muffins using the revolution roll recipe and adding some vanilla extract and splenda.
          Wondering how to get 'most' of your net carbs from your induction veggies?

                It's okay to have a treat once in a while, but be very aware that for some of us, one serving won't be enough and we'll keep feeding and feeding our sweet tooths indiscriminately.

                Be very aware of portion size and portion control. Don't get it into your head "Oh, this is just cream and a little splenda.....I can eat the whole bowl if I want. It's not like I'm eating chocolate chip cookies. It's cream and splenda."

                As Brooke used to say, "low carb junk food is still junk food."
