    This may sound dumb but, in Doc Atkins book I can't find anywehre that says if the veggie measurments are before cooking, or after. Is that 2 cups before cooking ? Can anyone please answer that for me ?

    There are no dumb questions - it is dumber to make errors because you failed to ask. The measurements are for raw veggies. I know that is not really stated but Atkins says that when something cooks down in volume significantly we have to make sure we measure them raw so we do not underestimate the carb count. That probably means we should make it as a rule to measure raw.

      It's in the Induction section beneath the "Other Vegetables" listing:

      If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.
