    Scrapple - A dish made from scraps of cooked pork mixed with cornmeal, broth, and seasonings. The cornmeal mixture is cooked, packed into loaf pans, chilled until firm, then cut and fried.

    If this is the scrapple you are talking about, Cornmeal is not an acceptable ingredient for induction.

      You can make scrapple without cornmeal...

          Nitrite and sugar-free bacon is easy to find even in the largest of supermarkets. Just have to read the labels carefully. For example, Stop and Shop's "Nature's Promise" brand fits that bill and are quite tasty...

              The way I make it is to get a pound of ground pork, some slices of ham and some bacon, chop those up, season it all with onion pepper and thyme, use an egg to bind it all, and then make a sort of "souffle" in a loaf pan. Bake it up in the oven, then keep it in the fridge; when you want a slice or two, take it out, cut off a slice and fry it up. It's very yumm-o, especially with a little bit of butter or sugar free maple syrup on top! Doesn't have the same taste as the real stuff...I suppose it is more appropriate to call it a breakfast meatloaf...but I prefer to think of it as my beloved scrapple.

                I'm going to try this. It better be delicious or it's your hide I'll be after! Haha (Just kidding, thanks for the recipie.)
