    Re: Atkins buddy?

I was going to start today, but I am having a really hard time planning a one week menu. Keep in my mind this a menu for my whole family- so me and 7 kids (living at home). I am not sure this is safe for them, so I am not sure what I should do. Plus it seems everything is a new recipe. I want to start, I am just overwhelmed by the idea of learning 21 new recipes!! Plus the kids, and homeschooling... Anyway, I am gonna try and go over ti tonight, see if I can't simplify it for myself. But I'd LOVE a buddy... anyone starting tomorrow maybe?? If so, PM me and we can share e-mail address

For the kids, you can add to the menu a serving of beans, starchy vegetables, whole grains, fruits...

Plus it seems everything is a new recipe.
Did you make omelets before? Salads? Cooked vegetables? Roasted chicken? Steaks?

I'm sure there are recipes you know that are low carb or that can be "low carbed".

You really don't have to make fancy recipes, and as Georgiana suggested many of your previous recipes can probably be altered to make them lowcarb.

Maybe it would help for me to list my typical induction menus? You could make extra starchy vegetable dishes or rice or pasta ones for the children, maybe using whole grain ingredients instead of the less nutritious white flour ones.

Here are some of the dishes/foods I ate on induction - but you might not like or have the ingredients, so try to work out something similar, using it as a guide.

I havent mentioned quantities but bear in mind the cheese 'allowance' of 3-4 ounces and that we can have up to 3 cups of vegetables from the 2 lists.

Also that we ought to be getting 'most' of our carbs from our veggies, so choose those with more carbs than plain old lettuce unless you dont intend to eat cheese, eggs or cream which all have carbs!!

          Breakfast:
Meat & cream cheese rollups plus some cherry tomatoes
Slices of red pepper rolled in meat and gouda cheese slices
A slice or two of crustless quiche made from eggs/cheese/cream/cooked meat/cooked veg Revolution Rolls (recipe in the 14 day induction forum) spread with butter and Marmite or cream cheese

          Lunch(usually at a local cafe):
Eggs, bacon & mushrooms plus tomatoes if I havent had them for breakfast
Roast Chicken (skin on) with broccolli/green beans/cauliflower - with a pat of butter melted over them
Pork chops with similar veg or a salad/mayo
Green salad with chopped pieces of chicken & bacon thrown over it plus mayo

          Supper:
Crustless quiche as for breakfast but with a side salad of red peppers/mushrooms/chopped celery + mayo
Cauliflower in a rich cheese sauce (melt 2 ounces of grated cheese, one fluid ounce of cream and 1/2 ounce of cream cheese together)
Chicken curry served over caulirice (grated raw cauliflower microwaved till softish)
Hamburger 'pie' with some salad stuff
          Chicken drumsticks with mashed turnips/butter

          Snacks if needed:
          Meat/cheese rollups
Celery stuffed with cream cheese or pate
Chopped celery in mayo - sometimes with added psyllium husk if I felt the need for more fibre
          Piece of quiche
Hard boiled eggs - mix mayo and mustard/paprika etc into the yolks to make devilled eggs if you like them more spicy
Leftover anything (I always cooked more than the one meal's worth of most dishes to make sure there were leftovers available).

Always plan in advance so you have food available when you feel hungry so you won't be tempted to eat off-plan because you have nothing suitable ready to grab.

I hope this helps and gives you some idea of what can be done - but adapt it to your own taste - don't eat something you don't like just because I have listed it here
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Yes, omelets, salads, cooked veggies as sides for dinner. Chicken was usually done in a skillet (lemon pepper chicken), fried or baked. Steak was a rarity because it can be so expensive for a family of our size. But we'd do things with stewing beef meat.

Thank you for taking the time to list all of those My main thing is right now my breakfast is all eggs, and already looking at it I am "egged" out!! LOL I know it is supposed to be the most important meal of the day, but I am up at 6:45am every day and barely awake at breakfast, so easy is good with an occasional good cooked breakfast thrown in.

For lunch I don't usually cook anything bigger then to pop something in the oven, grilled cheese, soup or mac n cheese. During the day I am busy with school and taking the other kids to and from school so I can't be in the kitchen for a big lunch to turn around and go in there for dinner too. Plus with 7 kids and all that my kitchen would NEVER be clean!! LOL

Dinners I am more flexible on, as I have more time to dedicate and enjoy learning a variety of new dinner recipes because I have the time to learn them. My day is pretty much done, and I don't have to worry about a time schedule or running out to pick anyone up

Here are some of the ideas I had before I went and looked at their website:

            Breakfast-
Egg McMuffin (homemade) w/o the muffin (I also use the Deli Deluxe American cheese)
            Omelette
            Deviled Eggs
            Over easy eggs with bacon
Smoothie- cept I don't know how to make one LOL
            Scrambled eggs and sausage

            Lunch-
            Ham/Cheeseburgers (no bun)
Variety of salads- caesar, tuna, chef
            Tacos, no shell
            Celery and tuna

            Dinner-
            Kabobs- chicken w/peppers
            Roast and a veggie
            Ham/Cheeseburgers
            Pork Chops and a veggie
Marlboro Man sandwiches minus the bun (on Pioneer Woman's website)
Lemon Pepper chicken, with bacon and melted cheddar cheese
Stewing beef seasoned with Italian seasoning (skillet) with a side veggie

            Snacks-
            Sugar free jello
Whip cream? (heard froma friend who did Atkins)
A big hershey bar, but only one small square a day (got the idea from same friend)
            Pork Rinds
            Cheese Stick (mozzarella)
            Cubed cheddar

From the website, I also added 10 olives (green or black), meat and cheese roll-ups, celery sticks (6), sliced and salt & peppered tomatoes.

So how did I do?? What about Crystal Light?

            Thanks so much!!

              I am "egged" out!!
This is a recipe you can make in advance and keep in the fridge for a quick snack/breakfast:

You can also make quiches with veggies and have a slice of that for a meal/snack. I find quiches less "eggy" then omelets or scrambled eggs.

For lunch I don't usually cook anything bigger then to pop something in the oven, grilled cheese, soup or mac n cheese.
Again, cooking more and larger recipes in advance will help.

You can still have soup. Just make it low carb.

I also use the Deli Deluxe American cheese
I prefer cheese that doesn't have colorants and a bunch of preservatives added to it. If you choose to avoid them, you could buy a block of cheese and slice it yourself.

              sausage
Did you check the ingredients in it? Any sugar (for example, dextrose) in there?

              Tacos, no shell
You can make taco shells from cheese: http://www.atkinsdietbulletinboard.c...cipe-pics.html

If you are using taco seasoning mix, check the ingredients. It has sugar.

              Ham
Make sure you check the ingredients in this, too.

              Sugar free jello
Do you really want to have this? It's best to stay away from sweets at least during Induction, to starve your sweet tooth.

Plus, jello's nutritional value is zero.

Whip cream? (heard froma friend who did Atkins)
I would suggest you read the book yourself instead of relying on what friends say.

This is the Acceptable Foods List: http://www.atkinsdietbulletinboard.c...induction.html

You can find cream there, but you'll see that is limited during Induction.

And make sure you use real cream... the kind that you whip yourself... not the stuff that comes in a pressurized container. The latter has sugar.

A big hershey bar, but only one small square a day (got the idea from same friend)
See? This is a bad idea. No Hershey bars are allowed on Induction.

              What about Crystal Light?
You seem to be very generous with your sweet tooth.

Seriously, Crystal Light is junk. It's best to have no sweets on Induction.

I guess I failed I am anxious to get started so bad, because I don't want to delay any longer... but I am getting so frustrated because it's either I learn all these recipes that aren't all good for induction or I am clearly lost by myself. And really with 7 kids running about, in and out, chauferring to and from school and homeschooling, I don't have time to read. Heck, I've barely any time to think And to boot, I just became a single mom, soooo.... maybe I should just find another diet, something simpler? I won't lose as fast, and really my self esteem could use a "happy", but I haven't even started and already I am feeling overwhelmed

What makes you think that? Just because I pointed out things you can correct and made some suggestions, it doesn't mean you failed. It means you need to change a few things... that's all.

it's either I learn all these recipes
You don't need to learn all those recipes. I didn't.

or I am clearly lost by myself
Why? You cooked meat and veggies before Atkins, too. You cooked eggs before Atkins... You had cheese before Atkins...

                    Re: Atkins buddy?

I think you are making it a bit complicated by worrying about learning new recipes etc You don't ahve to make any special recipes at all if you don't want to.

Meat/fish and vegetables from the list, with the option of also using eggs/cream/cheese in your cooking along with the 'good fats' like butter and most oils is really what it is about.

Do you have a list of all the allowed foods for induction? Just choose something you like from that list and eat it!! Maybe copy and print out the list that Georgiana gave you the link to?
Wondering how to get 'most' of your net carbs from your induction veggies?

                      Re: Atkins buddy?

Hi Missed. I think you got some really good advice here. Thought I'd chime in as I'm going into my 4th week here (extended induction) and can relate to that overwhelmed feeling with the "recipes". I had to stop overthinking this WOE because most of what we're having for dinner is stuff I've always cooked! I have a few recipes I've used and tweaked for different veggies. And that's kind of why I wanted to respond. Once you see the basics for some of those recipes, you get back to your old way of thinking about a recipe - sub this for that, etc (not the bad stuff though).

While I don't have 7 little ones, I am a single mom and I've learned to work with my son during meal preparation to make sure he has the starches he needs. So I typically prepare a main meat and veggie and usually a salad. Sometimes I'll do the main veggie and a salad and make mashed or roasted potatoes for him. Just one additional dish that I won't eat.

Family meal staples are totally compatible with this WOE - casseroles made with broccoli, tuna salads, egg salads - all ok. Just think about your normal menu and look at what you'd change. Chances are it's usually the accompanying items and not the main dish.

                      Good luck!
