  • Need Some Easy High Calorie Snacks

    I seem to have a hard time getting enough calories, and I need help!

    I didn't get to put yesterday's food into FitDay until today. Even though I ate eggs, pork, meatballs (induction safe from Linda's site!), a little cream and cheese on my broccoli, I still didn't break 1200 calories for the day!!!

    It's so hard to get motivated to make food when I'm NOT hungry, and I'm busy chasing a 10-month-old all day.

    I usually have a batch of Linda's Korean meatballs (minus the sauce - we don't use artificial sweeteners in this house) in the fridge for a quick snack. I also keep a couple packets of cooked salmon around, mix some with a little cream cheese and dip pepper slices in it. Yum!

    Does anyone have any suggestions for some easy snacks to keep convenient? I already know that hardboiled eggs count... but for some reason, I can't stomach them lately. I'll make a deviled egg whenever I'm in the mood, but I need something else.

    Now here's something to make it difficult: I hate, hate, hate mayo (with a few minor exceptions). I can't do tuna salad, egg salad, etc. Bleeecchh.

    Oh! Does anyone have a mini-quiche recipe? I love quiche, and that could be a quick and easy snack.

    This recipe will be 6 "Egg Muffins". They are quiche like in consistency. They also freeze well after baking and cooling.

    5 well beaten eggs
    1/4 cup cream
    1/8 cup iced water
    6 heaping teaspoons grated cheddar or colby
    1 teaspoon parmesean cheese
    pepper to taste
    Mix together thoroughly.

    Mound no more than an 1 heaping teaspoon of grated cheese in each of six sprayed muffin tins. (Tip: Home grated cheese goes further than pre-grated, packaged cheese and pre-grated cheese is often carb treated so that it does not stick together.)

    Add crisp bacon or diced ham, sausage, peppers, left over veggies to muffin tins topping with some remaining cheese. Pour egg mixture over cheese and "toppings".

    Bake at 350 for 13-15 minutes. Can be refrigerated and warmed up later.

    Basic Recipe: 8 carbs - Add carbs for veggies

      The only times to eat snacks is if you are hungry between meals or if you've gone more than 6 waking hours without eating something and you're not ready for a full meal.

      Your body isn't stupid: it won't let you starve. So listen to it and go with the flow. I've learned that somedays I'm hungrier than other days. So on the days I'm hungrier, I eat more than on the days I'm not.

      Babies and toddlers have the ability to eat only that amount of food they require for energy. They've done nutrition-behavior studies to prove that. Unfortunately, many of us un-learn that skill and, more likely than not, overeat the amount we need to eat.

      So listen to your body. IF 1 egg and a 1 cup of cucumber slices satisfies your hunger until lunchtime, then that's all you eat.

      It's always a good idea to keep snacks on hand in the event you are hungry between meals. Hard boiled eggs, veggie sticks and dip, and cheese are some quick snacks.

      As for tuna salad: you don't have to use mayonnaise! You can do a "lighter" tuna or chicken salad by mixing the meat with a vinaigrette of lemon juice, salt, pepper, and olive oil or canola oil. For me, this type of chicken or tuna salad has a cleaner, lighter taste than the mayo-based ones.

        That's true! With tuna salad, the italian way is actually to make it with tuna (of course), then onions (usually red, sometimes white), celery (with the leaves, tastier!), and then red wine vinegar and olive oil. However, I'm not sure if you can have the vinegar for induction or not?

          With the exception of balsamic vinegar (because it contains added sugars), most vinegars are okay for Induction.

          Before anyone gets on my case about balsamic vinegar containing added sugars....Yes, the authentic balsamic vinegar is aged in casks for 10 or more years which evaporates the liquid and gives it a sweet taste and is as thick as honey. However, this balsamic vinegar costs $60- $100 (maybe more!) per ounce In other words, the balsamic vinegar you buy for $5 or $10 in the supermarket is not that balsamic vinegar. They do age the balsamic vinegar (but not for 12 or 100 years), and to make up for aged flavor, they add fruit juice or some kind of other sweetener to it.             Megs - I was told that I have to eat at least my BMR in calories, which is 1900. Now I'm getting confused!

            I've always believed in only eating when hungry... maybe I'll just stick with that. The only food I will make myself eat when I'm not hungry will be my veggies.

              Dr. Atkins wrote that you didn't have to count calories, too. If you need to count them because you are used to counting calories, then go ahead. But if you listen to your bod, you probably will hit the "right" number daily.

              Follow the 6 hour rule. There are times when I get so busy with something that I lose track of time and go more than 6 waking hours without eating. Then I find myself overeating, because I didn't realize how hungry I was. When I follow the 6 hour rule, I am better able to control my food intake (that is, not over-eat.)

              Be sure to eat those veggies with some fat, in order to blunt the blood sugar response.

                yep feed your hunger and listen to your body. some days you are hungry and will eat lots of food and others you are like those picky toddlers Megs mentioned. it will al average out.

                The BMR calculators just give a rough number and have no idea oif you are a marshmellow or rock hard person at your age weight and height so it can over estimate and underesitmate.

                Just listen to your body for things like lack of energy, tiredness, irritation for no good reason, metal confusion, dizziness light headed or any other normal for you hunger thing and respond with some nutrtionally dense foods.

                Now if you are consistantly eating too little and delevope symptoms of malnutrtion then you will need to force cals but otherwise listen and use the 6 hr rule.
